I recently had the pleasure of dining at Gingolé in Lisbon, where I was treated to an authentic taste of traditional Angolan cuisine. I sampled two variations of Moamba, a signature dish, starting with Moamba de Dendém and followed by Moamba de Ginguba. Both were exceptional, with distinct flavor profiles that left me torn between the two. To accompany my meal, I requested Machanana a hearty mash of pumpkin leaves and okra, which was rich and satisfying. The Kizaca, a mash of pounded cassava leaves, was another highlight, offering a unique texture and bitter flavor. A side of okra complemented these dishes nicely. The Funge misto, a porridge-like mixture of cassava flour, maize, sorghum, and millet, was a perfect accompaniment to the meal.
