I'm sad to report that Del Forno no longer features among my favourite neighborhood restaurants in the Gauteng region. Whether for the purpose of economy or otherwise, the ingredient quality has taken a turn for the worst.
Our family used to enjoy Del Forno's burgers - a staple among diners - yet the burger patties have recently been replaced with substandard commercial fare that appears to consist largely of soya and fillers. As a professional chef, I'm gobsmacked by the failure to produce the simplest of staples in wholesome, homemade form. The measure of any good restaurant is whether simple staples are homemade or commercially produced; after all, seekers of fast foods have ample variety of junk food to choose from.
Having lived in Italy, I can also attest to the fact that Del Forno's Pizza bases, Melanzane Di Parmigiana, and pasta are far from authentic. True Cuccina Povera favours natural, non-GMO, simple, high quality ingredients, none of which featured in our varied menu orders.
For the sake of fairness, I commend our server who remained friendly and courteous throughout, despite being challenged by the slow preparation of bar and kitchen orders. As a former restaurateur, I find it abysmal that four drinks couldn't be produced in time to be served at once. One blender in a seemingly professional restaurant...? Ridiculous to say the least.
And the coffee - the very heart of Italian culture - was perhaps the greatest disappointment. I can honestly admit that I make better Cappuccino at home, because I understand true Barista art.
