How could such an exceptional dining experience have eluded my written record? Caught up in the fervor of sharing my delight verbally with friends, I neglected to pen down my thoughts on this remarkable establishment. Despite frequenting this neighborhood, the absence of rave reviews from friends had kept me away from this hidden gem. Confident in my familiarity with the local culinary scene, I approached the claim of this place being a renowned eatery with a hint of skepticism.

Upon arrival during the peak dinner hour, our party of four was met with a substantial wait time, suggesting a dining delay of over an hour. This in itself affirmed the restaurant's reputation, yet we deliberated the merit of such a wait. Unanimously deciding to persevere, our patience extended beyond an hour.

The recommendation of Yang-muchim (seasoned tripe) piqued our interest, but the true revelation was the presence of Pyongyang naengmyeon (cold noodles) on the menu. Typically reserved for specialized establishments or Korean BBQ spots, the inclusion of Pyongyang naengmyeon in such a diverse menu was both surprising and intriguing. Had the naengmyeon failed to impress, it would have significantly tempered my overall assessment of the restaurant, regardless of the quality of the other dishes.

"기본과 응용이 모두 완벽한 족발과 평양냉면"

#기본과응용사이

본인이 대학원 다니던 시절에 지도교수님께 혼이 날 때 가끔 듣던 꾸지람이 있는데, 그 중 가장 기억이 남는 문장이 "기본이 안되있어" 였다. 당시 젊은 본인으로서는 참 기분이 나쁜 꾸지람일 수도 있는데 불혹을 훌쩍 지난 지금 돌이켜보면 그 꾸지람으로 인해 나의 발전의 근간이 되었던 것 같고 큰 재주가 없었던 본인이 10년 이상 미국에서 버틸 수 있었던 마음가짐이기도 했다. 기본이 없는 응용은 아무리 화려해도 뭔가 허전한 느낌이 나는 것도 그런 맥락일 것이다.

#차족과따족사이 본인이 족발을 미친듯이 좋아하는 식성은 아니지만 족발에 대한 입맛은 확실하다. 최근 트랜드인 따족은 부드럽고 맛있긴 하지만 너무 흐물거리는 식감에 콜라겐의 좋은 점을 가려버린다. 게다가 따끈한 온도감으로 족발을 물리게 만들기도 한다. 본인에게 있어서 따듯한 족발은 몇 점 먹으면 물리는 음식이다. 예전부터 좋아하던 차족은 온도감이 주는 물림이 훨씬 적을 뿐만 아니라 실온의 고기가 주는 적절한 치감이 본인 취향이다. 그래서 나에겐 이라는 등식이 확고하다. 그런데 이번에 방문한 분당의 은 따족도, 차족도 아닌 딱 중간인 이라고 이름 붙이고 싶다. 따듯하지도 차갑지도 않고 두 족발의 장점만을 가지고 있다. 적절한 콜라겐 식감과 고기의 담백함이 족발 안에 꽉꽉 차있다. 그래서 썰기도 차족에 비해 조금 두껍게 썰어낸다. 입에서 느껴지는 충만감이 참 대단하다.

#족발의기본 이집은 족발의 기본을 참 잘 지킨다. 너무 강렬하지 않고 적절한 간으로 맛있게 삶아 냈다. 적절한 식감을 주기 위해 삶은 족발을 잘 식혔다. 풍성한 충만감을 위해 썰어낸 두께도 완벽에 가깝다. 너무 두껍지도 얇지도 않다.

#화려한변신 기본기가 워낙 뛰어난 족발인데 여기에 기발한 아이디어들이 응용이 된다. 컨디먼츠의 화려한 변신인데, 내어주신 곁들임이 새우젓 부추무침 백무채 (통후추, 레몬 소스) 양파청양고추 피클 고추기름마늘장 통마늘 된장무침 고수

돼지고기를 먹을 때 필수인 1과 2는 이집의 기본을 상징한다. 3과 4는 이집의 응용성을 상징한다. 5, 6, 7은 이집의 독창성을 상징한다.

한식으로 족발을 먹을 수 있게 해주는 기본인 1과 2가 기본이고 평범해 보이는 무채와 양파절임도 이집만의 독특한 터치를 넣었다. 압권은 5, 6, 7인데, 통마늘편을 된장에 무치니 이 또한 돼지고기와 어울리는 완벽한 별미다. 게다가 의 고추기름 마늘장은 맛있는 족발의 신세계를 열어주는 인도자다. 이 장을 푹 찍고 그 위에 마늘 한쪽과 고수를 얹어 먹으면 이 족발이 한식인지, 중식인지, 동남아식인지 분간이 안된다. 게다가 맛은 미쳤다. 담백한 이집 족발에 강렬한 액센트가 더해지는데 마무리로 향긋한 고수향이 여운을 준다. 이런 미친 조합을 어떻게 생각하셨을까 그져 감탄하면서 먹는 시간이였다.

#평양냉면 #보물찾기 이집은 육수를 참 잘 내는 집이다. 그래서 평양냉면과 곰탕, 칼국수 같은 고기육수 사용 메뉴들도 함께 서빙을 하신다. 이곳 평냉도 유명해서 한 그릇 부탁을 드렸는데, 첫 인상은 뭔가 고기만 툭 올려져 있는 투박한 모습이다. 그런데 고명을 하나씩 걷어내면, 아롱사태 밑에 돼지편육 돼지편육 밑에 동치미무 동치미무 밑에 백김치 백김치 밑에 오이절임이 숨겨져 있는데 다양한 고명들을 보물찾기 하듯이 걷어내고 발견하는 재미가 좋다. 게다가 고명 하나하나 수준급의 품질이다 육향이 참 좋은 육수다. 오로지 고기국물만으로 육수를 내서 육향과 감칠맛이 참 좋고 담백하다. 봉피양 스타일의 육수이긴 한데 봉피양 육수에서 느껴지는 고소함 보다는 육향과 감칠맛이 더 지배적인 야성적이고 맛있는 육수다.

면빨도 좋아하는 얇은 면빨에 또아리도 탄탄하게 잘 잡혀져있고 식감도 톡톡거리는 만족스러운 면빨이다. 족발 맛집인줄 알았는데, 평양냉면 맛집도 인정이 된다.

#만족감 단순히 맛으로만 평가한다해도 당연히 만족스러운 집이다. 그런데 탄탄한 기본기에 신박한 아이디어가 곁들여져 이집의 가치를 한껏 뽑낸다. 식사 후 단순히 맛있는 음식을 먹었다는 느낌 보다도 식사로 기억이 남는다. 이런 호사스러움도 기본기가...

The restaurant was listed onto Blue Ribbon Survey since 2019. All the dishes are generally tasty and plentiful. Especially the Seasoned Tripe suits my taste. It is unique, appetizing and even good as a side dish for drinks. Pyongyang Naengmyeon, which is cold wheat noodles, is the signature menu and Beef Tripe Soup, light and delicious, is also recommended.

The restaurant does not have parking lot (even a valet parking is not available) and does not accept reservation, so a long wait is needed during...

Known for boiled pig trotters it’s a first come, first served basis. Must add yourself to list on self service machine at entrance, they will text once your turn. We were party of 4 and waiter less then 30mins on a Friday. Food is average compared to other places, side dishes are decent but service is awful…pricey for what it is. They also serve soupy noodles and tripes which were ok. Garlic in miso was something new as usually in Korea they just serve raw garlic
