We began with a type of Caesar salad that felt underwhelming for the price for a third of a plate of salad covered with cheese, though the green gazpacho and trout ceviche were beautifully presented and quite delicious. Our mains were a mixed bag: my wife’s trout was nicely prepared, but the brown sauce was way too salty, while my pike-perch on a purple St. Gallen potato base was quite good. The dessert, an alpine herb ice cream, didn’t stand out, and the atmosphere was a bit chaotic with children kicking around toys near the tables. Four staff members personally congratulated us, but nothing was offered or presented to suggest that we were celebrating a birthday.
The waiters, however, were fantastic and helpful every step of the way. A notable highlight were the local wines and the “Verve Garden” mocktail, which was refreshing. That said, there were no amuse-bouche or mignardises—details you’d expect from a Michelin-star restaurant. This omission, along with some of the other missteps, made it feel like they might not be living up to their star rating. Overall, a mixed experience with some good service but too many disappointing gaps. If you’re looking for a true Michelin star restaurant experience, sadly, this is not the place. Then again tonite on our 5th night we wanted to give it another chance and even with booking note saying --less salty-- food came again with excessive salt, totally inedible. And the portion oh my god, literally there was less than 20 grams of meat, which was supposed to be the veal main course. I showed it to the manager and he agreed and seen the shame on his face. I wished i had taken a picture, that dish was literally insulting. Long story short, we had to send the main course twice back problem. Food in this restaurant is literally just plain bad. Olive D'Or, hotels own restaurant is much much better than this. I dont understand how Verve got a michelin star, totally ridicilous. We regularly eat at michelin restaurants and literally you can get better food in any decent cafe. We wasted 2 nights of our holiday in this bad restaurant and left the table hungry. Such a shame. Still, the service is not as personalized or attentive as in other Michelin-starred restaurants. For instance, we had to wait a long time for the staff to take our order. We just sat there long after we had chosen what to eat. We also waited over 10 minutes for our check. The food is well-presented and mostly very delicious. The beef tartare was excellent. The meat was very tasty, though it was rather too cooked for a medium. The fish, although of good quality, was bland, definitely the weakest part of the meal. The Rhubarb dessert was ceratinly creative, but the sourness overpowered any other flavour the dish had, making it slightly unbalanced.
Overall, this is definitely not a bad restaurant, but it lacks the refinement present in other restaurants...
