Today's driving course for Olivia took us to Evolène, almost in the bottom of the Herence valley in Wallis, a slightly depressing place in the absence of snow at this time of the year. She had her share of hair-pin curves and driving through the thick cloud cover and since we were approaching the time when no more food is served for lunch, we stopped at La Grange, a family run eatery in the very center of Evolène, serving Wallis specialities, or as they state on their menu, specialities from the Valley. You are well received and served what is popular in this part of the world. The only vegetarian dish on the menu besides salads we could find was macaroni mixed with potatoes and grilled under a cheese cover. I had an entrecôte put on a piece of hot slate which is a safe bet for the cooks, since the guest is responsible to do the cooking to his taste. Since I prefer blue, I need to eat very fast, sometimes complicating my digestion. Their wine list is typical of Wallis, i.e. well garnished with local wines....
