Sushi Amamoto (鮨天本), Tokyo: An Unforgettable Omakase Experience Sushi Amamoto (鮨天本) in Tokyo is a revered sushi establishment, consistently recognized with two Michelin stars and often hailed as one of the finest sushi restaurants globally. Helmed by Chef Amamoto, the restaurant offers an exclusive omakase (chef's choice) experience that transcends mere dining, providing a profound journey through the art of Edomae sushi.
Culinary Mastery Chef Amamoto's reputation is built on his unwavering dedication to sourcing the finest seasonal ingredients, primarily from Japan's most reputable markets. His approach to sushi is characterized by meticulous preparation, subtle aging techniques, and a masterful balance between the neta (fish) and shari (rice). The rice is noted for its perfect texture and delicate seasoning, forming an ideal canvas for the pristine seafood.
While the omakase menu changes daily based on availability, diners consistently praise the exceptional quality of the fish. Highlights often include:
Tender Octopus: Known for its perfect texture, often achieved through precise preparation that retains a pleasant chewiness without being overly soft.
Flavorful Shellfish: Varieties like tsubugai (whelk) are celebrated for their natural sweetness and crisp texture.
Aged Tuna (Maguro): The various cuts of tuna, often expertly aged, reveal profound umami and melt-in-your-mouth tenderness.
Uni (Sea Urchin): Renowned for its intense sweetness and creamy texture, often perfectly paired with fragrant, high-quality nori (seaweed).
Anago (Sea Eel): Typically served warm and incredibly tender, with a delicate char.
Every piece of nigiri and every otsumami (appetizer) is crafted with precision, showcasing the chef's deep understanding of ingredients and his refined technique.
Intimate Ambiance and Impeccable Service Sushi Amamoto offers an intimate and focused dining environment, typically featuring a small counter with limited seating (often around 8 guests). This setup allows for a personal connection with Chef Amamoto, as he meticulously prepares each piece directly in front of his diners. The decor is understated and elegant, designed to ensure that the culinary performance remains the central focus.
The service is exemplary, attentive, and discreet. The staff anticipates needs without intrusion, contributing to a serene and comfortable atmosphere. Given its popularity and limited seating, securing a reservation at Sushi Amamoto is notoriously difficult, often requiring booking well in advance or through a lottery system. The price point reflects the extraordinary quality of ingredients and the unparalleled culinary artistry.
For serious sushi aficionados, Sushi Amamoto offers an unforgettable and highly sought-after omakase experience, truly embodying the pinnacle of Japanese sushi...
Read moreNo chance to taste the sushi due to no seat till end of this year, however, overall experience to book the seat is very bad. Nobody answered the phone for almost one week. Thought that it might have been closed due to COVID 19 Pandemic, but took a chance to pay a visit to the restaurant. Found that it was so noisy in the restaurant. Was told by the waitress that it was a membership restaurant and the seats were fully booked till end of the year. Next year, it will depend on the release of the membership from the management. It’s the first time I heard that Michelin award Stars to membership restaurant. I am just wondering how the Michelin inspectors visit membership restaurant...

The restaurant is hidden within some office buildings and easy to miss, the restaurant space is small - probably ten to twelve people tops. The place is almost booked in advance for months, so definitely should book early on.
Japanese food lovers should definitely try...
