A small ramen shop that specializes in citrus-flavored ramen.
I highly recommend the 柑橘鹽味拉麵. The citrus broth was salty, yet refreshing. The noodles were also the perfect texture, akin to al dente pasta. For people that want softer noodles, the shop was also kind enough to provide a 3 minute timer you can use to wait for the noodles to soften. The toppings were also carefully thought out. The chicken & pork chashu were peppery and provided two types of textures. The 3 types of onions not only add extra textures, but they also provide the sweetness and sharpness that gives you a break from the flavorful broth.

It’s a very unique broth, light, balanced salt, and very flavorful. We also tried thick and thin noodle, both were good and I didn’t think the thick noodle was that soft; overall I prefer more bite so the thin noodle was better for me. The amount of instructions and guides were amusingly almost too much information but everything is very efficiently run and service is quick and effective. We ate the classic citrus ramen and followed the instructions to let the noodles sit for a few minutes and remove the citrus before too long as it can make it bitter.
If you follow this and maybe add some chili oil we both REALLY enjoyed this. The Chashu was subtle and simplistic yet good, nothing impressive. What I did enjoy were the clams in the broth. That was a very nice and enjoyable touch that I hadn’t tried before. Noodles were interestingly harder than I’ve had before but very good.
