Updated from the newly opened location:
Chef Paul continues to impress with his raw focused, authentic omakase experience at the new Hanamichi location. While the price point is higher than the original road side store, it is worth every penny. From several first time experiences in Taiwan, such as fugu (河豚) sashimi with fugu skin and giant 20 year old conch, to being happily overloaded with uni (海膽), it was an unforgettable 18 courses. Not to be understated, everyone left the meal feeling very satisfied and full, something that can't be said for many omakases in town, unfortunately.
While we opted for the higher price point option, I have no doubt that the lower price point option will be just as worthwhile. Thanks again for hosting us and the wonderful meal, I look forward to...

在寒流夜晚~但是暖暖的!來自師傅的熱情,分享他處理魚的乾式熟成、急速冷凍、自製烏魚子、還花了一個月教台東漁民活締的技術等等,是個有溫度的店😘
環境比較簡陋一點,只能坐6-7個座位,在市民大道旁半露天的環境,反而有點日式屋台風!提供不同價位的選擇,我們選了2500$~據說時不知是比較高價的旁邊的朋友意外被升級,共多三道,202402會換地方經營~期待
師傅也會跟你互動,分享知識是個非常熱情的人,我說直接放我手裡,他還說要先擊拳👊才可以給你吃😆~很調皮

老闆自製烏魚子烤過醃製清酒,配上海苔、蝦、乾杯一起交融:是一段交響樂,蝦子鮮甜、海苔與干貝咀嚼帶出來的甜味層次,到了最後烏魚子慢慢咀嚼的韻味,很完美,👍👍👍
自製燒烤烏魚子漬清酒切片:跟師傅追加的!搭配帶來的清酒強調煙燻的香氣,熟度完美濕潤,鹹度適中非常好吃,👍👍👍
白旗魚厚切炙燒:來自台東的白旗魚,師傅說花了一個月教學活締的重要,還說他如何標價!厚切炙燒後油脂非常飽滿,肉質非常軟嫩,好吃,👍
天之瀨鰤魚三角厚切:飽滿的肉質、豐富的油脂不愧是白肉用之王!帶點咀嚼感鮮甜度很棒,👍👍
天之瀨鰤魚腹肉握壽司松露鹽:魚肉搭配有層次的松露鹽不錯,咀嚼起來層次帶出肉的甜味,👍
白魽上背肉握壽司紫蘇鹽:灑了少許的薄鹽、紫蘇鹽,用鹹度襯托魚的鮮甜,非常好吃意猶未盡!👍👍
鮪魚骨邊肉醃製威士忌與醬油握壽司:醃製一段時間,用少許威士忌讓尾韻多一個香甜的風味,讓靠脊椎部分的肉新鮮好吃,很喜歡👍👍
鮑魚鮭魚子釜飯:用鮑魚肝蒸飯,鮑魚很飽滿飯還不錯
時不知鮭魚佐山椒芽握壽司:重頭戲之一,之前只有在漫畫上聽聞過!鮭魚比想像中還小,是雌雄同體的時不知!非常多細刺看師傅處理蠻久的~用了山椒芽,是個完美與鮭魚交融在一起,甜味、淡雅油脂、辛香料、香草植物等等,好棒!👍👍👍
黑鮪魚腹肉鐵籤燒佐雪白鹽:用了鐵籤炙燒還冒煙撒上不會鹹的雪花鹽,不會膩口吃起來非常Rich👍
北寄貝握手壽司:爽脆的口感不過如果能放在前面一點比較好
明蝦醃製昆布握壽司:蝦子雖然不大但是肉很紮實,配上昆布一起咀嚼層次感很不錯,👍
炙燒黑鮪魚、赤海膽、紫蘇、青蔥太捲:拿到還冒芽的😆~整口放入嘴中,烤過的鮪魚新鮮、海膽鮮甜、紫蘇和蔥一起層次感豐富,當收尾的一道很完美,👍👍
湯:用了蝦頭、魚骨一起熬煮,冷天喝上覺得很補😌
甜點:熊本草莓與哈密瓜,草莓是很清爽的甜味,哈密瓜肉緊實不錯
