晚餐價格：$2500/人（含服務費） 這個價格在桃園應該算是高級無菜單料理餐廳才會出現的，但在台北吃久了竟覺得很便宜😂😂 $2500應該是台北日料中午的價格吧⋯⋯ ［ 今天的餐點內容 ］ 鮑魚洋蔥慕斯 佐蒔蘿（茴香） 季節竹筍（黃金筍） 法國血橙汁 油醋沙拉 竹莢魚 握り 縞鯵 野生胭脂蝦 佐鴨肝 鰤魚 紅喉 干貝 炙燒鰭邊肉 海膽鮭魚卵 河豚南瓜 百里香 圓鱈下巴 紅皮馬鈴薯 手工青醬 法式澄清雞湯 布丁 我覺得柏壽司不是那種非常傳統的日本料理，兩千初頭要做很道地的日本料理可能比較難有新意跟獨有的特色，它融合了一些主廚的巧思跟法式元素在裡面。 很喜歡吃無菜單料理就是享受其緩慢的上餐節奏，每道餐之間都能有足夠的時間品味及整理口腔味道迎接下一道菜，無菜單料理著重的應該是食材與料理手法帶給自己的驚喜、變化，與其考慮吃飽這件事，吃巧對我來說更重要，份量拿捏的剛好，才能讓每一口都是美味的！意猶未盡是最美好的狀態。 這次讓我很喜歡的是圓鱈下巴上的手工青醬，清爽微酸的醬汁替油脂豐厚的魚油做了解套，更能專心在品味魚肉彈牙的口感！ 握壽司每一貫都還不錯，野生胭脂蝦雖然是台灣漁港的但表現可圈可點，干貝的甜度也讓人滿意。 兩千多的無菜單料理，柏壽司已經是非常不錯的了！希望去第二次的時候也能有更多不一樣的餐點體驗。
