Chef Gaa lives up to the hype! Made famous by YouTube channel OTR, this is by far the best Moo Krob in Bangkok.
This is a step above Michelin Guide featured ones. Both are great, but this is just another level above that. The tenderness of the meat, the amazing crunch of the crackling as well as in the spice mix (if wanted). Absolutely amazing.
A few helpers to get you there and to order:
If you are ride sharing / taxi-ing to Chef Gaa, get the driver to drop you off at the 7/11 nearby. Walk down and to the right you should see the alleyway, on one side wall is a purple and blue wall as pictured.
Walk down it until you get to ‘Soi 39’ on Google Maps, turn right and Chef Gaa is a couple of houses down.
The locals know he is getting famous so if you get lost near it, they will guide you.
Chef Gaa speaks only Thai so use a translator app like Google Translate to communicate. He will read the Thai translation.
He will likely ask if you want a spice mix with chilli and salt with the Moo Krob as pictured. If you can tolerate a small bit of spice, I recommend it.
You can order it with rice or just the Moo Krob. Tell him what you want.
A ‘hidden menu’ item is a fried egg on top (as pictured). Tell him if you want that.

The place is quite difficult to find, but the community is very helpful in guiding you to his stall. Upon reaching the stall, there is an English menu and a Thai menu. The most popular would of course be the crispy roast pork with holy basil on rice. Chef would ask you if you could take spicy and I would recommend it if you could take spice.
He told me the whole process of making his roast pork takes 4 hours. And he used to work overseas in Hong Kong, so now he incorporates HKG cooking with Thai style. He came back just to “retire” and cook good food for the community, but was made famous by a youtuber OTR.
I would rank his roast pork as one of the best I’ve eaten. The crispiness could be heard and the garlic adds that flavor and aroma to the dish. Definitely request an additional fried egg (I believe he uses duck egg).
The other dish, the fried minced pork with holy basil though! That dish was out of this world, definitely the most tasty pad krapao I’ve tasted in my life.

To find his place you've got to put your adventure hat on and get your walking shoes out!
On the right side of the tracks, down beautiful green sois, over storm drains and past friendly groups of local boys drinking (who will undoubtedly ask you to join them!)
Chef G's shop is unassuming, with pictures of family on the wall and a single bench out front.
Don't be fooled however! His Moo Krob recipes are absolutely top notch, we tried the Pad Krapow and another of his specialties which he called Yunnan Style Moo Krob.
A definite must go, in a must see community. One of the last gems of Bangkok and easily the most welcoming vibe I've experienced in any big city in recent history.
