They make very good coffee on par with Starbucks (I tried hot latte in 7 different places in Pattaya).

Tastes and choices of people differ. One can like very, very strong coffee, other can like something different. Some prefer very dark, some prefer light. It's not always "serve the darkest, strongest coffee" and "oh yeah, that's coffee!" but it's the 'balance'.

I prefer drinking latte these days and this place serves it with perfect balance. Very good latte.

Same goes for cooking 'any' food. Key to a good meal is of course first getting quality ingredients. But.... "I will make the best food! I am putting double the spices!" No. You you will ruin what you cook. Again, think of a plate which consists of dough and meat. "I will put double the meat, with double the curry and tomato sauce" No, again you will ruin it because it's "balance".
