I'm giving Silhoutte three stars instead of the five it could have earned, solely due to a serious safety hazard at the entrance that makes this establishment inaccessible for people with mobility challenges.
The Critical Safety Issue: The entrance ramp is genuinely dangerous. The hotel sits more than 12 inches above ground level, accessed only by a narrow metal ramp without any handrails. When wet, this becomes a death trap - I nearly fell despite holding onto my son for support. This is unacceptable for any business and creates liability concerns. I would strongly urge management to install proper handrails immediately.
The Positive Experience Inside: Once safely inside, Silhoutte impressed us greatly. We discovered this gem because they serve food until 11:30 PM when most Jomtien establishments close by 10-11 PM. The 5th-floor restaurant features excellent dÃĐcor and a pleasant atmosphere with adequate cooling from ceiling fans. The service was outstanding despite having only two staff members. Both waitstaff were exceptionally friendly and attentive throughout our visit.
Food Quality: The menu execution was mixed. My expensive steak, ordered medium, suffered from being cut too thinly, which prevented proper searing and left unappetizing white fat around the edges that should have been trimmed. However, my son's pasta with mushrooms and truffles was excellently prepared and flavorful. Our companions enjoyed a well-curated antipasto plate featuring quality nuts, cheeses, Italian meats, figs, and dried fruits.
Final Verdict: Would I return? Yes, but only on dry nights and with assistance navigating that treacherous ramp. Silhoutte has the potential to be a five-star experience if they address the accessibility and safety concerns at their entrance.

Everything we ordered food wise was spectacular â burrata tomato salad, wasabi beef, corn ribs, Caesar saladâĶ even the bread and dipping sauce. Yum. The drinks could be tweaked just a little. I would love to see less sweet options for their specialty cocktails. That said, I hope that they create a vodka or cachaca cocktail with their passion fruit smoothie; it really is exceptional, and you can use a spoon in its thickness. The most delicious thing was the bread basket with butter and garlic. The seafood pasta was cold, there weren't enough seasonings. The bruschetta had normal beef, but the sweet bread spoiled the whole experience. When we finished eating and wanted to ask for the bill, the waitress chatted with the bartender and didn't come to us for about 10 minutes. I think these dishes are not worth the price.
