Bolete is simply the best restaurant and bar that I've ever found. The food is fantastic, the hospitality amazing and the drinks simply superb. The layout of the seating is very open so you don't feel like you're squeezed up against other diners. It's dog friendly too.
Located near the Wirral Way and only a stone's throw from Parkgate, Bolete serves up modern British cuisine with skill and passion that I have never encountered elsewhere, and I've eaten in Michelin-starred restaurants. Take the Hispi cabbage for example. I never would have believed that the humble cabbage could be made so incredibly tasty, but it is at Bolete. And that's just the start!
The very best thing for me though is that they care, not only about the quality of the responsibly-sourced ingredients but about the whole experience from the warm welcome that everyone receives right the way though to the good-bye.
Shaun and Kayleigh, the co-owners, run the business not to get rich but because they have a genuine passion about what they do, and that really shines through.
My wife and I have been regulars since just after the business started at the tail end of Covid and we've struggled to eat anywhere else since, as it almost always ends up being a disappointment in comparison.

Read moreDecided to go for brunch on a Sunday with some visitors I had staying about 12.30pm I had eaten here previously before the rebranding as Bolete and it had been great food and atmosphere, always fairly busy.
The place was totally empty! Despite there being three boards advertising brunch and the website having a brunch menu I was shocked to be told they didn’t do brunch on a Sunday! Surely this is the one day people are likely to want brunch. Also please state on your website when you serve to avoid wasting people’s times. If you don’t make it clear how can people be expected to know restrictions on serving options, the assistant made me feel a little stupid for not knowing they hadn’t served brunch on a Sunday for some time.
We ended up at the Elephant in Parkgate which was heaving, great atmosphere and tasty food. Maybe a rethink on the brunch policy might bring more people in to Bolete.

The beef was some of the best I’ve had in a long time—perfectly cooked, full of flavour, and incredibly tender. Portion sizes were generous, which isn’t always the case with high-quality food, but I left feeling properly satisfied. Everything on the plate was spot on—the roasties, the gravy, the veg—no weak links. The homemade horseradish was next level—so fresh and full of heat.
Took a picture of my food before pouring the gravy over it, but trust me, once that rich, velvety gravy went on, it somehow got even better.
Service was friendly and welcoming, and Kayleigh, the owner, really made the experience. The place itself is immaculate, with a real attention to detail in both cleanliness and design.
