Firstly, well done for this first attempt of trying to bring a higher level of dining to the area. Having eaten at around 25 Michelin starred restaurants and probably double that with AA rosettes i hope this is taken as constructive. Now onto my review. The homemade bread was fine, try to get the sizes of the mini loafs a little more similar. Sadly the restaurant team hadn't put sideplates onto the tables, so had to go and get them for each table. The cheese and truffle gougere was very good, think about the presentation on a shot glass. The king scallops, a little small, a little overdone. The side of crab and pickled samphire needed a bit more crab and samphire and "pickled" taste. Otherwise ok. Beef Cheek doughnut. This wasn't really a doughnut, more like some beef shreds in a scone dough. Consider chiiling down the beef and its gravy to almost frozen so it could be made into a ball, then wrap in a savoury doughnut dough, rather than batter, then deep fry. Taste was ok as were the garnishes. Next sea bass, good crispy skin, fish slightly over, but a very good chicken butter sauce. Green apple sorbet with lemonade foam was too sweet. Needed to be more acidic to be pallet cleansing. The flavour of the lamb was generally ok, but be more selective in the cuts used, better trimmed as it was a little chewy and gristly. Cheese pannacotta was an epic fail. It had not set, was runny and way too salty. it was a liquid cream/custard with a top skin and pistachios on.. Finally the chocolate bar, a little bit too much of the bar, mousse needed to be lighter, the tuile needed to be thinner and crispier. pistachios again!!. Ease off with the coriander, use a variety of micro herbs for garnish if you go that route, and three courses with crushed pistachios was overkill, look at the balance. Good luck for future events. Keep trying and learning. Ensure the waiting staff have tasted and understand and can explain the dishes, I know this was new for them too. General presentation of the dishes was ok, Portion sizes for Yorkshire probably ok, but the cheese pannacotta and a bit too heavy on the chocolate dessert spoilt the ending. The coffee we had as an extra after was good flavoured.
