The chicharrón en guacamole was another standout – crispy pork belly served over a bold guacamole that balances the richness of the meat beautifully. We just ate here our second time. This time we got take out. While I was a little bummed we didn't get chips with the queso fundido or consome with the birria tacos, honestly, it was okay because the food was so freakin delicious! The fundido stands on its own with a fork (or spoon), and the birria tacos had enough juice in them to make you think you dipped it in consome, yet the taco had just enough crunch. My wife had the enchilada mole and was in heaven! She knows mole, and this place has what she wants. My daughter had the California burrito (with carne asada) and loved it. My 9 year old son had the pollo rostizado and macked that chicken down! I would note my family is picky...and they loved this place both times. You gotta try it - you won't be...

Out of the 20+ Mexican restaurants in Atascadero, take my word for it, this is by far the best. The ambience is great, the service is impeccable, the greeting is friendly and warm. But the thing that raises Fuego above all the others is the quality of the food. This is not your usual burrito, rice and beans joint; this is a real restaurant with imaginative, creative, perfectly balanced dishes, cooked with care and love.
