It's said that the best Ethiopian restaurants in the US are in D.C. -- and that city does have some incredible gems. But! We are extraordinarily lucky to have a local Ethiopian restaurant that competes with the best of the D.C. Ethiopian eateries: and that's Chef Seble's Eatopia. To be totally honest, Eatopia isn't exactly local for us: it's a 45 minute drive from Boulder. And yet, we keep making that drive.
Eatopia is hands-down my favorite Ethiopian restaurant in the area. (It's usurped Megenagna for me, which -- to be clear -- is still good!) Seble's food is utterly delicious and balanced. Get the vegetable platter, and you'll be presented with an array of fresh vegetable stews and dishes, along with a vibrant green salad. Her sambusas are freshly stuffed and fried to order, resulting in one of the most delightful food experiences you'll ever have. I particularly love the lentil sabusas ... they're garlicky treasures! We always gobble up the tibs (particularly the beef awaze), which are well-spiced and delicious. And the doro wot! That sauce is just wonderful.
What stands out to me the most, however, is the injera. Injera is so difficult to get right! I've tried making it at home, and, after two weeks of waiting for everything to ferment, my results were subpar at best. Ethiopian restaurants seem to be hit or miss with injera. It's just hard to hit the right note with that fermentation. And yet: Seble's injera is perfection. Pillowy soft, obviously fresh, and the perfect amount of sour. She's figured out how to make an injera that's consistently toothsome. In fact, all of the small children in my family love Seble's injera so much that they eat it by itself!
As far as the ambiance goes, don't expect a super quick turnaround or a formal environment. Eatopia is a very casual place, which I really appreciate as the mother to a rambunctious three-year-old. (My kid loves it there.) The restaurant feels like a casual hangout spot where you can make yourself at home, and people are constantly coming and going to either grab a bite to eat, get some coffee, or say hi to Seble. The food usually takes a while to make -- around half an hour, maybe more -- but once it comes out, it's obvious that's because the dishes were freshly cooked. Trust me: it's worth the wait! The staff is always friendly, and Seble herself is super genuine and pleasant. Go to experience Eatopia when you have time to enjoy your food and appreciate some incredible flavors. I wholeheartedly recommend this restaurant and strongly encourage you to give it a try! ⭐️⭐️⭐️⭐️⭐️

Read moreIf you love Ethiopian food at all, this is your place. Having eaten here twice, I’m an even bigger fan this time around. Just flew into town late, complete with a delayed flight, a lengthened layover, and quite a bit of time sitting on the plane while waiting for a free gate. After twelve hours of deciding that airport food is still airport food, I just wanted to relax and share a good, flavorful, health-conscious, hot meal, and that is exactly what I got at Eatopia.
First of all, the smells of all of those wonderful menu options hit you squarely in the face, from the time you pull into the parking lot. Upon entering, the incense caught my attention and set the atmosphere for the dinner to come. We took a seat, and I already knew what the damage was going to be: a vegetarian platter, an order of lentil sambusas, a hot tea, and an order of Shiro Tegamino (I hope I remembered the name correctly…WILL be ordering again). Before you question how much of this I actually ate, I admit that I fully intended to share this meal. I mean, intentions count, right?
Yes, it was certainly a feast. Yes, it was absolutely delicious. Yes, you should take my word for it. Note that there are no pictures. Chef Seble genuinely labored on our dishes, and the love she poured into each one was felt, tasted, smelled, and thoroughly experienced in appreciation. First of all, hands down, these are my favorite lentil sambusas to this day. I could literally take a walk there each day, just for the flavors and delicate spice within that flaky, yet tender crust. Every other dish followed suit, complete with richness that struck a beautiful balance between the natural flavors of the food and the complex blends of spices for which Ethiopian food is known.
Phones stayed on the table for the entire duration of the meal, even when we began that inevitable, final crawl to a gastrointestinal halting point. I won’t lie, I was far from hungry by the end, but I still wanted to eat the remaining injera on which the food sat, ESPECIALLY the shiro. (So rich and comforting to the soul!!!) Chef Seble even took the time to come to our table, personally verify the nuances of our orders, check on our enjoyment of the meal, and speak with us about her joy of cooking and heart behind opening a restaurant. As a returning visitor, I, for one, am certainly glad she chose to do so.
