This place definitely has great potential. However our experience was not pleasant especially considering the price point. When you're spending over well $400 for 5 people you'd like to think it would come with decent service as well. We had to wait extremely long for any drinks from the bar. I eventually just walked up to the bar myself to get my wife's drink. I had ordered two appetizers for the table, the garlic bread and the muscles. When appetizers came out they didn't bring any plates. The lady said she would be right back with plates. We waited around 20 minutes for anybody to show back up. Eventually our waitress showed up realized we still didn't have plates and she eventually brought some out. I had ordered a second drink when I ordered my entree and was 3/4 of the way through my meal before it arrived. Most of the food was good. My wife and I each had the ribeye and I can't recall ever having a more charred ribeye. All we could taste was charred crust. Pretty frustrating considering the $42 price tag. I had ordered a caesar salad as well which arrived about 10 minutes after my entree and it was warm with limp lettuce. We were all planning on ordering desert. The waitress took three guests dessert orders, ignoring the other two who had to wait until she came back to finally order their dessert. Finally to cap it off. The bill wasn't correct. Half of the items we ordered we're on the other guests bill and half of our items were on theirs. As well as we were overcharged for drinks, we were charged for doubles when I had asked for a single. Then they brought another drink for my wife which she didn't order. They made sure to charge us for that as well.

I love to explore new places and I am so glad our daughter suggested this one. I didn't know what to expect because every nice restaurant in the bitterroot valley has not been what it's hyped up to be. This place did not disappoint! The atmosphere when you walk in is almost a country club vibe but also a welcome to everyone vibe. We just came from a nice hike and were dressed as such. We were welcomed with the everyone is welcome here and we want everyone to feel it too. Loved it. Our food was very good to say the least. I'm a very picky person when you post pics of fine dining.... I want the Pic on my plate if you know what I mean. My son ordered the lamb and it just fell off the bone. The flavor was perfectly even with just a hint of game to let you know what your eating and a beautiful rounded seasoning throughout the rest. I ordered a ribeye to see if this place could cook one the way I want it and not destroy it with seasonings. First time I have ever got my steak perfectly med-rare... the only way in my opinion to eat a steak. The red wine reduction drizzled on it was perfect.

All in all, appetizers and meals were great! The only thing I would have them change is the ice quantity in the drink. I asked for light ice and apparently they only do a full glass of ice. Drink was still good though. I highly recommend this restaurant to anyone in the area, even if you just got done hiking. Good people, good vibes, personable. Thank you for tge experience! I...

My family has been to The Sapphire 3 times.

First time was absolutely amazing! Delicious food and above and beyond service, which made us come back a second time.

Second time was just as fabulous and matched the quality of food and service that we had the first visit.

The third time we went it was my mother’s birthday. The food was excellent and the service was absolutely awful. It ruined the whole entire meal. Kiley K was our server and needs to have more training. We had to ask for bread 3 times, did not deliver share plates with our mussels (there were four of us and two orders of mussels), had to ask her two times to open the bottle of wine we brought as we wanted to enjoy it with our entrees, and she asked us what we wanted for dessert and never gave us a dessert menu, so how would we know what we wanted for dessert.

For the price point of this restaurant I expect way better service. First two times we went we had excellent servers, Kiley K needs more training as she is not suitable for fine dining...

She explained that the restaurant was still in the process of testing its menu items for friends and family and was not yet officially open. However, she kindly offered to check if they could accommodate us, and upon her return, she invited us to sit and assured us that the management would be happy to serve us. The menu was truly exceptional, and the food we were served was outstanding. We were impressed by the restaurant's gracious staff and exceptional cuisine. If you're ever in Darby, MT, we highly recommend visiting Sapphire Restaurant.
