Indigo Casual Mexican Kitchen has quickly become one of my favorite spots, and for good reason! The food here is genuinely delicious, hitting all the right notes for fresh, authentic, and satisfying Mexican cuisine. You absolutely must try their fajitas. The plate arrives bursting with perfectly seasoned, tender meat, grilled onions, bell pepper guacamole and the aroma alone is enough to make your stomach rumble. Everything you need for building the perfect bite is there, from warm tortillas to fresh toppings. But the real showstopper for me were the flautas. Seriously, these are a dream. Imagine perfectly crispy, golden-fried tortillas encasing a flavorful, savory filling. They are served piping hot and are unbelievably crunchy on the outside, giving way to a wonderfully moist and seasoned interior. Each bite is a savory, satisfying crunch that is utterly addictive and truly mouth-watering! Save Room for Dessert! Just when you think you're done, you realize you need to save room for their amazing desserts. They are the sweet treat you absolutely need in your life! Their famous pies, the Pie de Guava and Pie de Piña (Pineapple), are simply spectacular. The crust is tender and flaky, and the fillings are bursting with rich, sweet, and authentic fruit flavor. They are the perfect end to a perfect meal, a warm, comforting, and sweet finish that will have you planning your next visit immediately. To wash it all down, be sure to grab one of their Aqua Frescas, especially the fresas. They are incredibly refreshing, light, natural, and not overly sweet. It's the perfect, cool complement to the rich and savory food. The staff is friendly, shoutout to Michelle and Maddox!!! The atmosphere is relaxed, and the prices are great for the quality you receive. If you're looking for fantastic Mexican food, especially those crave-worthy flautas and delicious fajitas, Indigo is the place to be! Highly recommended!

⭐⭐⭐⭐⭐ Absolutely amazing spot for authentic Mexican breakfast and lunch! I tried the chilaquiles rojos and they were a solid 10/10 — perfectly made and full of flavor. The breakfast tacos were hands down the best I’ve ever had, and the coffee? 100/10, honestly better than Starbucks! Service was fast, the staff was super friendly, and the whole atmosphere makes you want to stay and enjoy. It’s the kind of place you want to bring friends and family to just relax and enjoy great food together. If you’re looking for delicious Mexican food with great vibes, this is the place.

New Mexican restaurant in Edinburg area! My husband had 2 tacos and we shared chilaquiles rojos - spicy, but very good! I had 2 tacos - filling amount was good, and they didn’t feel greasy! They just opened, so tacos are 2 for $5. I had coffee - hot and yummy! My husband said his agua de horchata was also very good! We paid $33 for food and drinks! Will definitely visit again! Lovely decor! Owner and staff are very Friendly!
