Burnt chicken burnt onions not caramelized, burnt. Same sour sauce on everything. Hard dry crumbly massa on tamale with same sour sauce. Taste like some kind of fake cheddar cheese topping everything. I threw away 2/3 of my meal. The only thing I had that was halfway edible was the chille relleno. And believe me it still wasn’t good, it had some kinda gloopy cheese inside and a weird cheddar tasting blend on on the outside and the same sour sauce , the only thing that somewhat saved it was the egg batter was very good and the poblano pepper inside was cooked properly and not tough. I say this to the owner: please consider using a dash of baking soda in sauce to tone down the intense sourness as well as placing an order for land o lakes extra melt cheese to put inside the chilles and making certain when preparing tamales to mix massa for several minutes maby 15 with lard to prevent dry massa also be sure when preparing grilled chicken and onions it’s imperative to not overcook it. If your having trouble finding a chef that doesn’t overcook chicken maby try lightly seasoning chicken with oregano cumin chille powder salt garlic and onion powder then sous vide at 145 degrees f for 1 hour and then when you have an order heat flat top as hot as it gets, slice chicken, add oil to flat top throw down the slices and hit it with some fresh seasoning same as described above let it sizzle for 30 seconds whip it around 30 more seconds done sauté onions and peppers in the same manner just a bit longer and mix them together. As for the beef enchilada it needs a different kind of sauce called enchilada sauce it’s made by blending tomato onion garlic jalapeño water cumin oregano dried chilles black pepper salt and chicken base in blender until smooth heat oil in pan till it smokes pour sauce into hot oil let it go crazy that’s what you want to make flavor if it needs to be thicker add a touch of cornstarch to cold water add to sauce stir till boil turn off heat add a bit of butter done . Chille relleno needs a similar sauce but again different this one has a lot more butter and less potent flavor to compliment the chille but not overpower it. Salsa was too sweet needs a squeeze of lime and more garlic and cilantro and some more heat. Ground beef filling could use some love as well maby sauté it with some seasoning same as listed above and a touch of oil after you drain it and directly before placing it into the tortilla it will not only caramelize the meat just a bit but will also adhere some nice flavor directly to the meat while adding a kind of pan sauce of meat juice oil...

I tasted it and it was smoky and spicy, the way chipotle should be. Very nice flavor with the caramelized onions and peppers! I ordered the Carnita street tacos. It came with slices of avocado on top. I cut up the avocado and asked for more cilantro because I love a lot of cilantro on my tacos. The green sauce tasted vegetal by itself, but was perfect on the tacos. I added both sauces, and all together it made them excellent tacos! The salsa and chips were good. The salsa was a little on the sweet side, and the chips were thin the way I like them.
