BubbaQue's BBQ - Brandon — Restaurant in Florida

I recently moved from west Tampa to temple terrace and was eager to find a great bbq place within a reasonable distance, after alot of Google searching I decided to go to Bubbaques (26 minute drive). I got a rack of "meaty back" ribs(they describe them as really huge baby backs & were more than the piggybacks which were standard baby back ribs), some brisket and fried okra. Total was about $47, came home got situated and opened my food. They have really tasty sauces here I should mention but even these delicious sauces could not redeem these crazy dry ribs and brisket. For a chain that has multiple locations they seem to have zero quality control in place. The taste as far as seasoning was good and had they not been so dry the size was great but overall I dont think i will be back and that's a shame because it may not always be like that, but that's what proper quality control is for. Any person could feel/taste/see that the ribs and brisket were incredibly dry, on the other hand my dogs were THRILLED with all the dry scraps. Very disappointing, especially since 26$ for a rack of ribs is on the steeper end and the product should have clearly reflected the higher tier price. To be clear, I had no issue with the higher than average price, actually I was hoping it was indicative of high quality bbq and it helped sway my decision to eat there. Also they were not busy at all or anything (2 tables were seated, a 3 top and a 4 top) so no excuse. They need to seek a new kitchen manager. I should also mention the girls working the counter were friendly and got my order right and the okra was delicious. I really wanted to like this place. I don’t usually leave reviews, but this one’s well deserved. I came in hungry and left borderline obsessed.

Let’s start with the ribs. They were next-level — tender, flavorful, and had just the right amount of smoky goodness 🔥. The meat came right off the bone, and the Sugar Shack sauce? That sweet heat combo was crazy. I was sitting there licking my fingers like I didn’t have any manners.

The potato salad? Man. Creamy, cold, and seasoned perfectly. It was so good it made me wanna go home and smack my grandma — like, how have I been settling for basic potato salad all these years?

And the banana pudding honestly caught me off guard. I wasn’t expecting a BBQ spot to have dessert that good. Light, cold, and ridiculously smooth. It was the kind of pudding that makes you mad you didn’t order two.

Now let’s talk about Amelia. She’s a total game-changer. Super friendly, fast, and made the whole experience feel personal. You can tell she knows what she’s doing and actually cares about the people she’s serving. Even with a full dining room, she didn’t miss a beat — checked on us right when we needed it and kept everything running smooth without ever seeming rushed.

It’s was my first time dining-in at this establishment, but it was my second time trying the food. When I walked in masks 😷 are not required only if you desire to have one. The establishment was very nice and clean also when I walked in. Once in walk in you walk right up to the counter to place your order. The staff are all friendly and easy to talk to. I went around lunch time, but the line wasn’t long at all. The dining area had plenty of guests tho, but they had plenty of seating for everyone. The menu has some of everything to try when you think about BBQ . Once I figured out what I wanted to eat for lunch. I put my order in and paid for it, and you can leave your tip on the bill. I decided to have my lunch there the tables are nice and the chairs and booths are comfortable. When my order was up a very nice girl brought it right out to the table. Everything that I order came just as I asked, and it was fresh and hot. I enjoyed the bread so much I had to order extra.
