We love this restaurant so much we actually put it in our budget as a once a week necessity. The food is outrageously good. It’s creative, fresh, sourced locally whenever possible. The chef, Paul, is among the best in Santa Fe (and beyond) with his attention to detail, unpretentious and artful presentations, and his fresh recipes, not the same ole same ole. We have lived in Boulder, LA, and NYC, and Chef Paul is as creative as the ‘famous’ chefs in these areas. The bartender, Hillary, is an absolute artist with cocktails. She makes her own syrups and tinctures (those are not the right words, cuz I’m not a bartender. But know you’ll be getting drinks you simply canNOT get elsewhere and they will be outright delicious). She delights in serving people and she’s great at it. Jake, a server, shares the same care and charisma and delight in serving. He knows the food well, and his knowledge of mezcal is fantastic (he bartends when Hillary gets a well earned day off). Nathanial, another server, shares the same Fable excellence. He cares about the food and the customers and his beautiful, minimalist and powerful art graces the walls of Fable. And of course, a restaurant ain’t nuthin without a great front of house greeting. That’s Jessica’s role, and she’s the best. Because the place was packed and we did not have a reservation one night, we sat at the front bar for a bit of time that evening. Jess kept us entertained. You know how some front house greeters are over the top? Not Jess! She’s down to earth, warm, attentive, a great listener and she has some really great stories in her pocket, too! She knows the food, values local sourcing for the restaurant AND for the market, which is open midday until late afternoon for sandwiches (fantastic!!), empanadas and take home premade dinner. Read moreThis was a lovely experience and it is so welcome to have a quality restaurant in El Dorado. The atmosphere reflects a casual elegance. We were seated at a communal table in the center of the action. The service was remarkably professional. There was a small hiccup in our order that was identified, corrected and overly compensated for by the staff before we knew it had even happened.
The cocktail menu is sophisticated and our choices thoroughly enjoyed, although I would enjoy seeing a few more options please for the whiskey lovers in the crowd please. I suspect personal requests could have been accommodated - didn't ask.
I regret not getting more photos of the food, but you know how you see and just dive in because it looks so good, but then the Kodak moment is gone? That happened. The attached photo is of the fish special. Well executed, great flavors, beautifully plated. My main was a dry aged filet, which was impeccably tender and cooked to the exact definition of medium rare. It was bedded on shaved asparagus, an interesting and welcome twist. If I was forced to make a suggestion, I would ask for the addition of a starch to that plate to round out the meat and potatoes experience; while beautiful, the meat appeared a little lonely when it arrived.

If Fable were on Canyon Rd, it would be a perfect sister restaurant to either The Compound or Geronimo - Fable is that GOOD! The setting is the humble Agora strip mall, no trendy views or downtown Santa Fe vibes , a trip to Fable reminds you of what a high quality restaurant experience should be. You're greeted at the door by the friendly staff - reservations are highly recommended/this place is small and it was pretty busy for a Thursday evening. The lighting is pleasant, the background music is delightful (because it's in the background), the ambiance is foodie forward. The beverage menu has plenty of unique options at a fair price; quite a few wine bottles for less than $50. There are only 7-8 options on the dinner menu, but they were all intriguing featuring unique ingredients/spices. My friends ordered the ribeye steak and it was perfect - flavorful, tender, nicely seasoned and served medium rare as requested. My Sea Bass was delicious, very moist and not over seasoned or dried out. My wife's pasta was excellent - bright flavors and homemade pasta chewiness.
