Prospector's Cook House — Restaurant in Galesburg

When this place first opened it was so great, the Mac N cheese was on point and all the meats were awesome. This time however wasn't a great experience for us and we feel like they changed alot of things.

We go today and got 2 mac N cheese bowls. One was brisket, and one was pulled pork. The portion sizes were different this time compared to the last couple times we went. This time it was a much bigger bowl and we were so excited. The pulled pork was okay but had so much BBQ sauce pre mixed that it is overpowering. Both mac N cheese were runny like soup. Some noodles were not covered with cheese sauce and it tasted like kraft box mac N cheese. Lastly the brisket was not that great. It wouldn't fall apart easily and we had to cutt it...

BBQ in Michigan?? YES! We are surprised that this establishment has only been open for a few months. Nice place inside.

Ducked in for a late lunch with friends. Was a bit distracted by the tasty looking goodies in the bakery cases, but resisted.

Three of us ordered the pulled pork sandwich and lemme tell ya’ it’s excellent. Great flavor, not overly fatty, a bit crispy in some bites. Super generous portion and the toasted bun, also just right.

One of use ordered the chicken sandwich and it was excellent, as well.

The corn off the cob is OK and the mac-n-cheese is decent but not remarkable. Caesar salad is well, a Caesar salad which isn’t much to talk about, anywhere really.

To sum it up, the BBQ is totally on-point....

I first came here a few weeks back, and I left pretty satisfied, especially since the guy taking my order explained the flavor of all the sauces after I asked. I ended up getting a mac n cheese bowel and a burger with fries. Unfortunately, my last visit wasn't on the same level, I ordered the same thing as last time, and the food tasted under sauced, and the burger tasted pretty bland.
