When I first encountered the Dough Nguyener's building, I noticed the two-tone color of it. Come to find out, the white front section is for the customers, and the gray two story back section is for the staff. The two-tone color scheme continues within. The tiles of the main customer floor are two toned. The majority white tiles are for the walking, standing, ordering area. And the black outlined and gray detailed area for indoor customer seating. An attention to detail that I admire. The cleanliness of the restaurant must be taken note of here. The display of the different kinds of croissants, cookies, and donuts are clear and easily visible for the customers.
The staff wear black with pink aprons, another two-tone. Everyone moved electrically and with motivation. It was a fast-moving, skilled flow of people. They were very busy during my visit, and it was nice to see such a well-functioning and good-communicating staff. We were even checked on and updated a couple of times while we waited for our take-out order. And they called by name and I heard the staff use my name between them. It's nice to feel visible. It's nice to have my order named after me. It's not just a coffee and donut and chicken. It's Travis' coffee, donut, and chicken.
What we ordered: I got a shot of espresso and 16oz drip coffee separately, a powdered, strawberry filled donut, two-piece fried chicken with kimchi, a decaf 16oz coffee, a sausage and egg banh mi, and a chocolate glazed donut. Everything had good taste. The filled donut was so airy and light. The chicken was well fried, and the banh mi was tasty as well. The skill extended back into the kitchen. Many mess up espresso, but Dough Nguyen's espresso was very tasty. It smelled acidic, but the taste of the acid was muted. It was a surprising and lovely experience to drink it. It alone satisfied my palate.
My only recommendation for the place is to remove some supplies from view. Looking at the drive-thru windows from the inside, there were some boxes stacked on top of one another. The walls of this place should not be covered. The attention to detail should be extended and integrated with everything in this customer area. I mentioned the details in the beginning, and it would be really great to see this attention to detail held as a principle and injected into every inch of the place. It is noticeable, exceptional, and admirable. While these boxes do not take anything away from the function I saw, the good food, and the good people, I would love to see them hidden or integrated into a more classy way that reflects the rest of the restaurant. Do not let this dissuade you from going, though. It's well worth a trip and should be visited more than once.

Read moreReally mixed feelings about this place. Visited twice-first time just after it opened, and again, today. First time, it was after 11am on a sunday, line out the door. We waited for a few donuts to take home for later, and discovered they have pandan coffee. If for nothing else, I will always return for the coffee. It's just that good, and no one else is making, that I've been able to find. The first time, the donuts were very good and worth the wait. Today, we went at 8am, holiday weekend, and no line at all, just as expected. Donut trays were full, fresh bread on the counter, smiling staff member waiting for us to place an order. We ordered three donuts and 2 american breakfasts. There were no chocolate cake donuts today, just blueberry. We took a blueberry cake, raspberry filled, and chocolate glazed yeast donut. At 8am, 2 hours after opening, I expected all the donuts to be fresh. It's my opinion that only the filled donut was fresh. The blueberry cake and the glazed yeast were very firm and dry. They tasted good, but seemed stale. When we went two months ago, it was later in the morning, and the trays were being refilled the entire time we were on the line. This time, the donuts seemed like they were day old. If, in fact, they were all made this morning, then I simply don't care for them, as they were much too hard for my taste. However, I love donuts, and even a stale donut is often better than no donut at all. I do take exception to the american breakfast. The portion is huge, and if you've had a donut or two, it's big enough to split with another reasonable eater. My problem with this dish is the Bunge or Whirl that the eggs and meat are cooked in. Bunge and Whirl are artificial, yellow colored fat that tastes like rust and smells like plastic. I've worked in professional kitchens for 30 years. I was able to smell this the minute they placed the plate in front of me. There is no hiding that taste. All the beautiful garlic aioli in the world can't cover this taste. The eggs, ham, and bacon were coated in it. Ketchup didn't mask it. I have no idea why anyone would use this product. Of all the places to cut corners, substituting this product for real butter is so wrong. Eggs and butter have been friends for thousands of years. The fries on the plate were plentiful. The baguette was nice, but for breakfast, I'd rather butter and jam or honey, rather than garlic aioli, personal preference. The early morning staff, (we encountered 4 different staff members) were professional and welcoming. Maybe you have to go later in the day to get fresher donuts? Tax and tip, $63 for breakfast. Let me start off by saying that I have been to their pizza and Vietnamese spots, and never have I been disappointed in pricing, service, quality, or quantity. Now, for today's experience, I let them order for me... That being said, I am not sure the exact dish name. But, I am a huge aficionado of steak, and fortunately for me, the dish included steak. It was served piping hot in a cast iron pan (always my favorite cookware) , the steak was by far the best I have had yet. It was filet mignon quality steak, extremely tender, no noticeable fat or grissel, the sauce was mildly sweet, the accompanying tomatoes and garlic were all of the utmost freshness. The butter and pate were velvety smooth, while the French bread was fresh and perfectly crisp on the exterior. I am no stranger to bubble tea, but for some reason I have never had Vietnamese coffee with any topping or foam before, but I have to say it was a welcome addition...the only thing that might have made it better would have been a blend before the foam was added, but that is a minor thing. Despite that the wings were not mine, I tried them, and considering I am not a huge fan of chicken, they won me over, crispy, well cooked, and the sweat sauce was perfectly paired I can see ordering these in bulk for events and gatherings!
