There are a few skillful and excellent italians making great things in the restaurant industry in PR but if someone standout from the rest because of his sublime and gifted technique is Chef Alberto Gianatti. The first taste i had of one of his dishes was more than 2 decades ago and every year he just get better and better like a great Tuscan wine. He assemble all dishes with a careful harmony in every ingredient displayed across the plate. His array of flavors and textures are spicy, vivid and colorful. He always surprise you with unexpected proposals out of the menu. What makes Fornaio a very diferent italian eatery is that you can access and enjoy a 5 star italian dishes without the average rigors and formal etiquette that are required in such places. The atmosphere is relaxed and the service close but not intimidating. Fornaio have a master as a Bakery Chef, Miguele who prepare daily all pastries always faithful to the most well guarded italian techniques and tradition. The staff there are second to none and the best way to describe them is professionals with always an honest and lovely smile in their faces. This Italian restaurant at Plaza Caparra Mall is a cozy spot worth trying. They offer a regular menu as well as a daily special menu, which I’ve ordered from on both visits. The Fettuccine Rabbit Ragout and the Fettuccine with sausage and wild mushrooms were both delicious choices. Don’t miss out on the mouthwatering tiramisu for dessert. Chef Albe rto was at the counter talking to someone. Greeted us with a smile. I asked for his recommendation and went with it. The risotto with asparagus, basil and salmon. Also eggplant parmigiana. A Russian River chard. Knew it would be super. It was perfect. I ❤️ risotto! Alberto’s makes the best. Really! He said the salmon would melt in my mouth as I tasted it and it was exactly as promised. Last but not least the Tiramisu was exemplary. Have to go back to try more...
