Bill Cahill's Super Subs — Restaurant in Hudson

Bill Cahill’s Super Subs is hands down the greatest sub shop in NH or anywhere else for that matter! When you combine the quality, consistency, and speed of service they provide —they are unrivaled! I have been coming here since I was 16 years old, I’m now 33, and have been to Cahill’s well over 100x by now.. not once have I been remotely disappointed with anything at any time. I’ve turned many many people onto Cahill’s subs and opinions to this point have been unanimous in declaring them the best subs they’ve ever had. Mr. Bill Cahill has even become somewhat of a local legend, and on the rare occasions you get to have Bill himself make your sub is always followed by texts to family and friends bragging about it lol! The ONLY downside to a Cahill’s sub is that EVERY OTHER SUB you ever eat is compared to a Cahill’s.. always disappointing in how far it falls short in comparison— try your first Cahill’s sub at your own risk for it’s a burden you must bear for the rest of your sub-eating life.. I visited for the very first time recently. Very young teens working there for probably their first summer jobs. Service is friendly, the place is well kept, and the food is delicious. Such a neat atmosphere to the little place too! My only conplaint is that whoever constructed my order needs to work on presentation of the food. Waaay too many tomatoes. We're talking, someone dumped a literal cup of diced tomatoes in my little sub. A little too liberal with the mayo as well, and the meat and other veggies were falling off due to sloppy construction. Like I said, almost everyone there the day I came back in were very young kids so they probably just need a little time to learn to do this right. I'll try Bill's again towards the end of summer vacation and find out.

The subs here are always pretty fantastic, though I gotta remember for next time they already load the sandwich up with extra pickles. I asked for extra pickles having forgotten this and ended up with a load of them. Most couldn't even stay in the sandwich while I was trying to eat it which felt kind of hilarious while trying anyway. Luckily their pickles are fantastic anyway so I just snacked on them around bites of my loaded sub. My other half usually goes for the meatball sub and as usual he was very pleased with what he got. The only downside I would say is they don't cut the subs in half, or hadn't when we got ours. I'll just have to make sure to remember to ask them to do that next time, perhaps it'll make trying to eat it easier. Still a fantastic choice none the less and a wonderful hidden...
