🌮🎉 We had to stop and celebrate the soft opening of Taqueria Los Pachos in Hudson – and wow, are we glad we did!

I meant to take photos of the food... but those house-made tortillas looked (and smelled) so good that we quite literally gobbled everything up in record time. 🙈 No regrets!

✨ Amazing tacos? Check. ✨ Quesabirria that’s next-level? Double check. ✨ And for the heat lovers – ask for their Habanero salsa. It’s 🔥 in the best way!

The vibe? Super friendly. The food? Super awesome. And this weather? Absolute taco weather – don’t sleep on this! We can’t wait to see what they do for their full grand opening! 🌞🌮

I had the quesabirria tacos 🌮 with the consome, from a Mexican prospective not good at all. My tacos were falling apart, a lot of meat and hardly no cheese. Consome broth was thick, should be like light broth, tortillas should be smothered in the birria sauce and crispy with plenty of cheese and meat. Saw that they just opened and I wanted to try. Place is clean and very Aesthetic. But food was disappointing and not authentic from a Mexican standpoint 😞 Employees were very nice...

I really wanted this to finally be the super flavorful Mexican place in Hudson. I got 4 tacos so I could try the meats. The chicken had very little flavor, the adobada was mild flavor and dry, and the steak finally had some flavor but was very dry. The salsa I got with the chips was completely flavorless almost like they forgot all spices. I really hope it’s just due to the soft open. Will give another shot since all other Mexican in Hudson is also very...
