These are the best kolaches! They’re being made with a passion for quality. They’re so fresh that they’re often still warm.
The sweet kolaches are closer to “Texas kolaches” than the ones in the Midwest (which are often made with a brioche dough that becomes a bit chewy as is cools.) These stay soft and pillowy all day - if they last that long!
To get your kolache on, get up early! Like most of the town of Lebanon, Kolache Bakery opens early and is closed by 11 - but may be out of stock by 10.
Also be aware that this is a take away bakery. No cute tables for lingering, but the enthusiasm of the staff makes everyone feel welcome in their open bakery. Watch the kolaches bake, and get brushed with butter as they emerge from the oven. Enjoy the scents of sweet and savory fillings as they bake.
The pillowy, yeasted dough that surrounds the sweet fillings is absolutely perfect. Not too sweet, not too dry, a bit softer than a brioche, but still toothsome and sturdy enough to stand up to the jammy fillings… these are superb. We tried the sweet cheese filling, blueberry, cherry, lemon, apricot, and raspberry. They were all delicious. I’m hoping that they’ll also make some with poppyseed and prunes fillings. I miss those traditional Czech fillings.
We also tried one of the apricot glazed cinnamon rolls. It was very good, though I would refer to it as a sweet roll. It was redolent of fruit, from the apricot glaze to the golden raisins hidden inside its spiral. A wonderful treat, just not what I think most people expect a “cinnamon roll” to taste like. But darned good with a cup of your favorite morning brew!
The savory kolaches are just as excellent. The dough is different - sturdier and less sweet, it surrounds the savory fillings completely.
The savory fillings are worth mentioning too. We tried the sausage and gravy, the sausage, egg, potato, and cheese, and the potato, egg, and cheese. They were all amazing.
The pork sausage was less salty than most, with a nice balance of fennel seed. The cubes of potato were perfectly cooked; not mushy, able to hold their shape, but soft enough to be a wonderful complement to the texture of the dough. The cheese was sharp, the eggs soft (not rubbery.) The blend of flavors was spot on.
I can see why the locals recommend Kolache Bakery. Having tried them once, I know we’ll be getting up early enough to try everything they make!
This is food made with love. If you’re driving past the exits to Lebanon on Interstate 5, it’s worth the 20 minute detour to grab some kolaches for the road.
All of their offerings are reasonably priced, too - everything we tried today was less than $3 each.

Read moreAn amazing experience. I finally made it to the bakery to order some yummy breakfast. I put in my ordered and went to run errands as they had to rise and bake some kolachs yet. When I arrived back Chris was very nice and apologized for the order not ready yet. I had time to wait so he gave me a sample of apricot kolach hot fresh right from the oven. What a joy for my tongue. The salt butter on top and the apricot wasn't too sweet but just sweet enough with the salt. There are words lacking my mind for what my tongue experienced.
