These are the best kolaches! They’re being made with a passion for quality. They’re so fresh that they’re often still warm. The sweet kolaches are closer to “Texas kolaches” than the ones in the Midwest (which are often made with a brioche dough that becomes a bit chewy as is cools.) These stay soft and pillowy all day - if they last that long! To get your kolache on, get up early! Like most of the town of Lebanon, Kolache Bakery opens early and is closed by 11 - but may be out of stock by 10. Also be aware that this is a take away bakery. No cute tables for lingering, but the enthusiasm of the staff makes everyone feel welcome in their open bakery. Watch the kolaches bake, and get brushed with butter as they emerge from the oven. Enjoy the scents of sweet and savory fillings as they bake. The pillowy, yeasted dough that surrounds the sweet fillings is absolutely perfect. Not too sweet, not too dry, a bit softer than a brioche, but still toothsome and sturdy enough to stand up to the jammy fillings… these are superb. We tried the sweet cheese filling, blueberry, cherry, lemon, apricot, and raspberry. They were all delicious. I’m hoping that they’ll also make some with poppyseed and prunes fillings. I miss those traditional Czech fillings. We also tried one of the apricot glazed cinnamon rolls. It was very good, though I would refer to it as a sweet roll. It was redolent of fruit, from the apricot glaze to the golden raisins hidden inside its spiral. A wonderful treat, just not what I think most people expect a “cinnamon roll” to taste like. But darned good with a cup of your favorite morning brew! The savory kolaches are just as excellent. The dough is different - sturdier and less sweet, it surrounds the savory fillings completely. The savory fillings are worth mentioning too. We tried the sausage and gravy, the sausage, egg, potato, and cheese, and the potato, egg, and cheese. They were all amazing. The pork sausage was less salty than most, with a nice balance of fennel seed. The cubes of potato were perfectly cooked; not mushy, able to hold their shape, but soft enough to be a wonderful complement to the texture of the dough. The cheese was sharp, the eggs soft (not rubbery.) The blend of flavors was spot on. I can see why the locals recommend Kolache Bakery. Having tried them once, I know we’ll be getting up early enough to try everything they make! This is food made with love. If you’re driving past the exits to Lebanon on Interstate 5, it’s worth the 20 minute detour to grab some kolaches for the road. All of their offerings are reasonably priced, too - everything we tried today was less than $3 each. Kolache Bakery is open every morning except Sundays, so get your kolaches!

Got there about 15 minutes before closing. The nice lady invited us into the kitchen. She had several savory choices. All out of the sweet stuff. I ordered one of each. She very kindly gave me one Free. I told her we are from Eugene and that this was the first time we arrived before closing. She gave me a refrigerator magnet with their number. She told me to call or text and they will hold their delightful baked goods for us. We split the Pig in a Blanket. I took a bite. I enjoyed the taste and texture of the bread. I took another bite and said, "oh,yeah.". My third bite left me with a huge grin. The flavors and textures all come together in that extraordinary way that good, very good, baked goods do. A celebration of life. The Jalapeno Popper is joyous. The Chorizo, Egg and cheese is a righteous celebration. Please go to Brownsville and give your custom to these fine people. If you live in Brownsville you know. The price is Right! Amazing.

Thank you Kolache Bakery for donating to our fundraising event, a walk for the Cystic Fibrosis Foundation. The sweet and savory treats tray they put together sat next to donations from some pretty big names at the event including corporate sponsors Pepsi, Costco, Starbucks, and others. Once they started serving breakfast, the tray from Kolache was the first thing they ran out of. Sooo many compliments on the flavors of the Kolache rolls, and how fresh they are. I managed to snag one of the bacon ones and it was so delicious! They taste like a fresh baked dinner roll but with a breakfast bomb experience. Highly recommend giving this place a try for a quick breakfast on the go. Call or text your order in the day before, they sell out almost daily hours before closing!

I'd like to share my experience with Kolache Bakery in Lebanon, Oregon. First of all, the owner,Chris, spent extra time explaining to me what a Kolache is. A type of Czech pastry.He'd been up since 2am preparing the days goodies and instead of chasing me away after a full mornings work, he carefully explained the process that goes into making a Kolache. He expresses how he puts allot of love and careful attention in making these delightful pastries. He shared with me one sweet Kolache that came out of the oven,yummy. So fluffy and melts in your mouth. He sells savory Kolaches, perfect size breakfast you can't beat the freshness and taste. Chris has a big heart and puts thought into each delectable item to entice the pallet. Just order one of each, it will have you coming back for more. Get there early or put in an order to make sure they don't run out by the time you get there. This is one place I sincerely believe deserves to a review. Thank you Chris for going out of your way to make our tummies ...

An amazing experience. I finally made it to the bakery to order some yummy breakfast. I put in my ordered and went to run errands as they had to rise and bake some kolachs yet. When I arrived back Chris was very nice and apologized for the order not ready yet. I had time to wait so he gave me a sample of apricot kolach hot fresh right from the oven. What a joy for my tongue. The salt butter on top and the apricot wasn't too sweet but just sweet enough with the salt. There are words lacking my mind for what my tongue experienced. Delicious and worth going back many times over. Chris has his whole heart in his bakery. Stop by say hay and feed your belly Delicious baked goods. The jalapeño popper was hands down my favorite. They are light and fluffy and the right amount of salt to make the taste buds dance. They are hidden off park st. He plans to be opening a bigger place soon, for now you can pre-order and have them ready to go either pickup or delivery! Amazing human and...
