I found Scott's Parker's BBQ on the web series Munchies. On a trip up to Nashville for gluttony and excitement at another food venue, we decided to take a detour and learn what whole hog BBQ is all about.
I had a chopped pork sandwich with slaw and hot sauce on the sandwich and a half pint of potato salad. Even after it was wrapped up and unwrapped, it still looked pristine. It is tall and the ingredients are perfectly displayed stacked one on top of the other. I would liken it to the way a Five Guys burger looks unwrapped compared to the way a Whopper looks when it is unwrapped. ( the Whopper representing the way most BBQ sandwiches look after they are slapped together and squished into a bag) The potato salad has a mustard base with the perfect amount of softness in the potatoes.
They use a vinegar based sauce at Scott's Parker's BBQ. I think this is very significant in achieving the taste and texture of this great BBQ. This type of sauce, contrasted to a thick sweet sauce, will allow you to appreciate the moist smokey meat on this sandwich. In the Munchies video on you tube, they talk about the fact that the whole hog cooking keeps the hog on the smoke for almost an entire day. Smoke is the star of this sandwich.
On the way out the door I bought some sauce and told the employees how I had heard about them. I asked about middlin'. (the fatty most sought after meat on the hog) They had some there and offered me some to try. I had come after the lunch rush and figured that there was none left so I did not ask when I came in. It was outstanding. I would not call it a snap when I bit through the first bite, but there was a firmness to the meat. The smoke just came out as I chewed it around in my mouth.
I bought two bottles of their sauce and at that time, the owner and pit master, Zach came in from outside. One of the regulars, told him we traveled from Memphis to try his food. Read moreI found this place after doing some serious digging on the web. The place delivered. First, I must say I love swine so when I heard the best whole hog BBQ in the USA my ears perked up. So we went to this unsuspecting building in Lexington Tennessee. I had the supreme sandwich chopped with the hot BBQ sauce with beans and slaw. The sandwich was knock my socks of good. The pork was sweet and the fat melted right in and the hot BBQ gave that right amount of heat to off set the sweetness of the meat. This was a perfect combo for me. The slaw was standard as far a slaws go. I got the mayo slaw, they also offer vinegar slaw. The beans boy they were good they put a little green pepper in it and I think some of the pork. They were top 5 beans in my book. Long story short I was both satisfied and full when I left, but this didn't stop me from buying another pound of chopped hog for the road. At $8.50lb not bad. Read moreBeing from Central Texas I'm well experienced in Texas style BBQ (beef brisket or shoulder clod, post oak wood, low and slow, indirect, burnt ends, block cheese, pickles, onions, jalapenos, no sauce required if smoked right, etc...). Enough about Texas. Super excited to try a different regional style of BBQ, W. Tennessee whole hog style (hickory wood). Ordered two Jumbo's, both w vinegar based slaw, one w mild sauce, one w hot sauce. Asked for meat to be from various parts of hog w some bark. Meat was on point. Hog doesn't need same amount of smoke as Texas brisket, the pork fat brings its own level of flavor and Scott Parker's obviously knows that. Great mild smokey, pork flavor that paired correctly w simple crunchy fresh vinegar based slaw. Both sauces were direct and great was well, (vinegar based, not ketchup, or brown sugar based) meant to be w rich pork flavor. Gonna try mayo based slaw next time....
