We've made half hearted attempts to try this restraunt a few times, but it always seemed to be closed. That was on us. The hours are Tuesday - Saturday 5 to 9. I imagine we were there on Saturday afternoons and Sunday evenings the times we tried. We got the poutine as an app and it was spectacular. Potato Pave (think gratin without cheese) cut and fried served poutine style with a veal demi that I would happily enjoy on my death bed. Eat it with the scallion, it makes the dish!
My wife had the lobster spaghetti. I did not expect to like it, but she kept encouraging me to try it so I did. It's not often that food takes you on a journey..I dont mean pretense of "it transported me back to (insert pretensious european city here)". I mean a flavor profile that constantly shifted while you were chewing and the impression you are left with when done masticating is completely different than the one you started out with. At first you are hit across the mouth with lemon almost off putting as you continue to chew the savory really starts to kick in and the richness of the sauce and while you are winding down you hit the crisp panchetta and just the right amount of salt that leaves you with an impression that is far greater than the sum of it's parts. One of the few times in my life I felt like I completely understood what a chef was going for. I had the burger which was far less poetic for me. It was a solid example of the species though. The fries were perfect and the pickle surprising in the best possible ways. I winced at the first bite because it surprised me so much. PLEASE! make pickle chips of that and add it to the burger. I truly belive that would have turned that burger into something special. For dessert we got the cheesecake and the chocolate dome. Cheesecake was of the fluffy variety, I lean more new york style in my preference, but I would have eaten my napkin if you put it on that crust and the cheesecake was still quite good. The chocolate dome was a spectacle. I found almost every element of it delicious. The macaroons were some of the best I've ever had, the cream and sauces and fruit were all delicious. The only dissapointment was I found the mouse a little underwhelming. I think I understood why. When there is sooooo much chocolate on a plate a rich chocolate mouse can easily make it too much. But it was unable to stand up to everything else around it and was lost in the dessert. Service kept making me ask for refills which was my only real complaint. Great meal great evening. ...

Jason ( Chef) & Tyson (General Manager) Laveriere purchased the old Dr. Mike’s Cafe; after renovations they opened Flux Restaurant in 2018, to good reviews on their American cuisine with hints of Asian, European, and Mediterranean influences.
Ever tried an Aperitif ( Latin for “open” a light alcoholic drink) ? Specialty gentian liqueurs originated in France & Italy, infused with spices & herbs poured over ice with a squeeze of lemon or lime juice. Example from the Flux Menu . . . Spring Heat Aperitif:
Infused jalapeño tequila, St. Germain Liqueur, lime juice, simple syrup, dried local green cayenne and salt rim!
Their menu offers a refined narrow choice of entrees, created with local farm to table ingredients that promises freshness and originality! Tonight’s six entrees included a choice of NY strip steak, Mushroom Fried Rice, Flux Burger, Crispy Chicken Sandwich. My wife enjoyed a light Fish & Chips. While I ordered a Chef’s special tonight. . . seared Scallops with lap cheongsam sausage, fiddle heads, shimeji mushrooms, wild rice, chilis ( with a parsnip purée) . . . was excellent! Unfortunately we didn’t have room for one of their homemade desserts ! ( I’ll try a dessert next time)
Not to worry, they do offer several kid friendly entrees. . . Could try their homemade Mac &. Cheese, or Chicken filet, or Tempura fried Haddock.

While planning our trip to Maine to drop off our son at Bowdoin, we stumbled across this gem's favorable reviews on Google/Yelp.We are so glad we did.The ambiance was rustic, but hints were everywhere of an elegant diner from the past. The food from our appetizer to desert were out of this world! Party of four shared appetizers of Poutine with caramelized shallots, cubes of mouth watering potatoes with swiss cheese and a flavorful brown sauce to top off this bowl of French heaven. We also shared a Caprese salad with fresh tomatoes, buffalo mozzarella, basil and a lemon infused olive oil drizzled on top. Our entrees were so different culturally from one another, but equally delicious in every way. Mine was a asian inspired short rib dish with pea sprouts, Kimchi, spicy spinach and lettuce leaves on the side to wrap all this goodness into mini tacos and top off with a spicy asian sauce. Hubby had a whole French spring chicken with perfectly cooked little potatoes, vegis, Guanciale, earthy mushrooms and a French brown sauce. One adult son had Katsu venison and the other haddock fish in chips. All flavors on each plate had depth and were incredible, even the cole slaw that accompanied the fish n chips. All ingredients were very fresh and the creativity across all dishes were second to none. Being foodies who have a passion for cooking good food from CA, this place knocked our socks off.
