DIRECTLY to your response. What you serve is NOT a Marquesita. You serve a travesty and you should be ashamed.
This establishment is called 'la marquecita" but they have no idea what a marquecita actually is. If you come out here expecting the delicacy from the Yucitan Peninsula, you will be highly disappointed. What a disgrace to be called La Marquicita but serve waffle cone travesties. Horrible.
To your response. You're using the wrong recipe entirely. The wrong cheese, the wrong batter, the wrong thickness, and not made at all authentically. You act as if the open flame had anything to do with the horrendous taste of what you claim to be a Marquicita. You should be ashamed to have Marquicita in your business name. I drove 45 minutes to your business to be completely let down. A soggy waffle cone with the wrong recipe doesn't cut it!!!!

Queso de bola (Edam cheese), finely grated – essential
Nutella, cajeta (caramel), condensed milk, or fruit jams (strawberry,...

Everyone was super nice and they had a wide variety of fresh made popsicles, ice cream, and crepes along with an assortment of other drinks and sweets. We got the Forrero Rocher crepe and a banana split with chocolate, vanilla, and strawberry ice cream. The crepe was amazing! Just fantastic all around. The banana split was also great but the vanilla ice cream out shined the rest and I can confidently say it’s the best vanilla ice cream I’ve ever had. If you’re in Longmont and looking for a sweet treat, this is the...
