My daughter took me to lunch for a belated Father's Day. We went to a fairly new restaurant called Blue Corn Tacos.

No exaggeration when I say that this is probably one of the best restaurants in Longmont, and most affordable. Everything is made fresh with healthy ingredients. The tortillas are homemade on site, and your meal is cooked only after you order.

When I say it's affordable, each taco is $5, and they're bigger than the average size taco. I ordered one blue corn chili relleno taco and one beef steak taco. My plate came with rice and beans. We also ordered a side of guacamole and chips. The chips are not from a bag but prepared on site. And, the guacamole was the best in town. It was creamy, fresh, and melted in my mouth.

As if that couldn't get any better, the chile relleno taco was out of this world. Inside a soft blue corn taco laid a large chili lightly breaded and fried. Not spicy at all, just filled with flavor. That has to be one of the best tacos I think I've ever eaten. And, when you consider the price, this restaurant should be the top prize in Colorado.

I am so happy my daughter took me to Blue Corn Tacos because I now have a weekly place for lunch. I'll never grow...

There are a lot of great tacos in Longmont but this place is next level. I'm definitely not opposed to a classic street taco (we tried two of theirs and they were delicious) but this place really shines with their variety on their menu. They have so much more than just a few kinds of meat. We tried the beer battered fish taco, it was fried perfectly. Their menu also has some tasty looking meatless options so I would imagine it's a good spot for vegetarians. The star of the night was their green chili smothered chile relleno chimichanga. I mean, how can that be bad, but also it totally lived up to my expectations. We cut the thing in half to split and melty cheese just pours out of the chile relleno, it's incredible. And they do the green chili and all of the delicious homemade salsas on the side so that your fried food doesn't get soggy before you get home, which is ideal. The whole experience was really great. The staff was ultra friendly and warm even though they were in the middle of a rush and getting things out really quickly. Their online ordering site is really easy to use too. We will definitely be back for our favorites and look forward to trying more of...

I go here a lot so I'm kind of baffled by the experience I just had. I walked in and ordered to-go. I ordered double chicken bowl with only black beans and rice, I explicitly mentioned no lettuce, guac, pico etc. Just beans, rice and chicken. So they offered me double rice since I was missing so many ingredients and I happily said yes. I received my food with lettuce in it so went back to tell them and the rice portion was very small that at first I thought there was no rice. She told me they always put lettuce and I was confused because I didn't order it. She didn't offer to remake it or anything so I said I will pick the lettuce out, but upon thinking about it later, that's not the right way to handle the situation. So here I am eating my bowl, picking out the food I explicitly asked not to have in it. I go here a lot and am disappointed by this. There's a lot of good Mexican food here in Longmont so good service goes a long way to differentiate your business from others. Bummer of an experience.

edit: Picking this lettuce out of a rice and chicken bowl is a nightmare. What a disappointing...

Our fav taco shop is just down the road at Marco's tacos, so had to check this place out after a recommendation. Friendly staff and clean place. We tried the blue corn chips and salsa. The tortilla chips were really delicious and cooked to perfection. They are a thicker chip and you can tell they are made in house plus salsa had a great taste. The street tacos on the other hand were not worth the money. I did 2 asada and 2 Al pastor. The meat was so overcooked it was hard to eat the tacos, plus they had no taste at all. I have never left a taco on my plate ever and I could not finish these dry tacos at all. I drank so much water trying to get them down. I'll pass and stick to my go to taco place.

Definitely not the best or values taco I’ve ever had but they are overall pretty good. I had three specialty tacos and they are very filling. I do see the concern others have expressed with overcooking the meat—it was only an issue for me with the pastor. I would definitely like my pork to be more tender but it’s nowhere near inedible or flavorless. The chicken mole was also very good. And the shrimp on the other taco was also really well-cooked. The guy at the counter is very friendly and we had a great lunch. Not worth a 5/5 for the taste or value. But worth visiting.

2nd time I went there and the 1st time was yesterday! Had there tacos the mole and the beer battered fish. Got a churo which had a good filling and drizzled with Carmel both were very delicious So much so I went back again to try the chicken fajita burrito asked for it hot 🔥. Yet again was delicious the heat was good, not sure if it was the Chile or the hot sauce on the side. Also got a chips and guacamole side and there guacamole was good, blue chips were good as well.
