Update: I gave it another shot and was not disappointed this time. The Brisket was substantially better flavor and texture was on "point."😂 It was juicy and delicious. Ribs were still great. Sauce was a little more flavorful this time but the same style. The service was excellent and fast. The workers definitely prioritize customers over prep. They stopped what they were doing and helped when the line started. Great teamwork!
As a native Texan, I wanted to give an honest review. The service was great but the bbq was not so great. The brisket was undercooked (tough rather than easy to pull apart) and didn't have much of a smoke flavor. The smoke ring was evident but the flavor wasn't there. The sauces were a disappointment. They were kinda like syrup rather than sauce with limited flavor. (Similar to Rudy's BBQ out of San Antonio but without the flavor.) The spicy version was better because it had some pepper flavor. The Blackberry cobbler was good. The beans were pretty good. The ribs were much better than the brisket in flavor. They were a little tough but that's how it goes with smoking ribs. Small thing to some, but the Dr Pepper had a weird flavor, too. Not sure if it was the water source or what, but it didn't taste right. (Dr Pepper is important to Texans, too!) The sweet tea was good, though. All in all, I would recommend Nordy's in town rather than Serious Texas. It may have been the day or the location, but this wasn't Texas BBQ. Texas BBQ has its variants like mesquite in West Texas vs Oak in central, but it has to be pull-apart flavorful no matter where you get it. Sauce is a thin vinegary sauce - not a Texas tomato/sweet/smoky BBQ sauce, and frankly, that kind of hurts everything. Even if the meat is good, if the sauce is not up to par it kind of ruins everything. Only other choice was a "pepper sauce" - think tobasco with a healthy dose of black pepper. All the other restaurants in the area (Smokin Daves in Lyons, Rib house in Prospect, even Dickeys down in Denver) all have sauce choices so people from different regions can still enjoy the meal - not here. Theirs or nothing.
Also, the sampler platter (a great deal by the way at $20 for what must have been 1.5lb of meat - brisket, turkey, pork tenderloin, sausage, pulled pork, and ribs) came with three very strange sauces. The kinds of cherry/chipotle and mustard based pepper sauces that you would get beat up for if you actually served in Texas. BBQ is a serious thing and you don't throw cherry sauce at it - I mean come on.
Only meat that was sub-par was the pulled pork - it was extremely dry. Normally my favorite, this as inedible. In all fairness, though, quality control on meats is a tough thing and this might not have been their best day for pulled pork.
Only other note is they didn't have sweetner for their tea - yes, they had sweet tea but for a diabetic, sweetner is a must and they told me they dont keep anything but sugar. Really?
So - I'll probably go back and buy meat bulk - especially the brisket, but only option is to take it home and put real sauce on it.

I had the potatoe salad and beans (pinto). The potatoes salad wasnt bad but, the beans were very interesting. I come from NM and we put salt pork, maybe a little garlic powder and cook them and do not serve the salt pork as is mostly fat that has been heavily salted, so we throw it (or eat around and leave with left overs for flavoring) Here they put small, tender shredded pieces of pork, along with pepper, and I think maybe green chili or something else spicy. So, they were very different for me but were really very good. I had to eat around most of the pork, although good, it was more of a texture and "used too" thing for me. My husband had the coleslaw and said "eh".... but other than that loved his meal. My husband and I were visitors, the other 3 people live there and have visited this establishment many times. My brother frequents here a couple times a month when he travels through for his job. Everybody was very satisfied. And if you leave hungry, it is probably your own fault, either that you have a really big appetite. They do have all you can drink sodas and tea. The employees were all really great too.
