Columbine Bar & Grill — Restaurant in Mancos

I just moved to CO from WA state about six months ago and was finally able to stop in and try some take out today. I’ve walked by the restaurant every single day for six months twice a day and it smells amazing so I was so excited to finally get the opportunity to taste their food. I was so pleased! For lunch I had the BBQ smash burger with all the fixings. It was so delightful and flavorful. Definitely had some happy taste buds! I decided after a long day to have dinner there as well and ordered the honey sriracha chicken bowl and oh. my. goodness! Spicy, sweet, simple in the very best way and just all around satisfying. The customer service was absolutely wonderful. Very kind and people oriented. As I only had take out, I didn’t get to take in much of the atmosphere, however, from what I saw briefly, it was clean, spacious, comfortable and I didn’t feel that strange awkward social feeling one sometimes gets in certain places. I felt like I wasn’t so much an outsider but more of a friend visiting for a few minutes and it was delightful. I’ll definitely be returning frequently for more meals and socialization. Second visit... I'm updating my review and changing from five stars to three. It was so good the first time that we went back but we were completely ignored by the waitress. She was so busy talking that she didn't help or greet anyone. More people came in and sat further back in the restaurant and the server brought them menus. So, we moved back in hopes of service. The server brought us menus and said the waitress would bring us drinks, etc. as she rolled her eyes in the direction of the waitress. We kept waiting. The waitress finally stopped visiting and went to the table of those that came in after us, walked by us several times but didn't acknowledge us and walked to the back. We waited a bit longer and gave up and left. Apparently this place is good or bad depending on who's working. We might go again if we see the previous people working there. We'll see.

First visit... We weren't sure what to expect of a restaurant in such a small town and we were very happily surprised. We had the most awesome experience at this place! Seriously, the ranch dressing was on point. It's got a little bit of spice but in a good way, it was like at least 8.5/10 good.

So, we ordered a bacon cheeseburger with a gluten-free bun, an elk burger, and a grilled chicken sandwich. Let me tell you, that gluten-free bacon cheeseburger was the bomb! The bun had this tasty goodness, just a tad crumbly though.

Now, the elk burger came with an egg on top, and my buddy couldn't stop raving about how freaking delicious it was. I mean, I can totally see why!

On the flip side, the grilled chicken sandwich got a bit too charred for my other friend's liking. But hey, they still enjoyed the flavor, so no biggie. Oh, and wait till you hear about the creme brulee! It was downright amazing!! Seriously, the best I've had in years. It left me with a huge grin on my face.
