On a recent trip to Aviva Brick Oven, I decided to try their Bianco pizza, a white pizza that swaps traditional tomato sauce for a cheese-forward flavor profile. After tasting it, I can confidently say that it was a solid pizza with some standout qualities. Here’s how it stacked up.
The Pizza Evaluation
Crust
The crust was one of the highlights of this pizza. It had a slight crunch that was satisfying with each bite. I particularly enjoyed the delicious burnt nodules on the edges, giving the pizza a rustic, wood-fired quality. The flavor of the crust had hints of seasoning, which complemented the overall flavor profile without overpowering the simple but effective ingredients.
Sauce
Since the Bianco pizza is a white pizza, it comes without sauce, which worked well in this case. The lack of sauce allowed the cheese, oil, and basil to shine on their own, delivering a bold, garlic-forward flavor reminiscent of garlic bread. If you’re someone who prefers a minimalist, sauce-free pizza, this will hit the mark.
Cheese
Aviva didn’t skimp on the cheese here. It was generous and had a great texture, with the perfect amount of melt and stretch. Each slice had the right balance of gooeyness without being overly greasy. The cheese was rich and flavorful, blending well with the garlic and basil.
Toppings
Basil was the primary topping, and it was used just right. Fresh and fragrant, the basil added a layer of depth to the pizza, cutting through the richness of the cheese and oil. While minimal, the simplicity of the topping enhanced the overall experience.
Presentation
Visually, the pizza was appealing with just the right amount of burnt spots that you'd expect from a brick oven. The slightly charred crust gave it a rustic, homemade feel, while the sheen of the oil on top gave it an appetizing look without making it appear greasy.
Overall Impression
The Bianco pizza at Aviva Brick Oven had a delightful garlic bread-like flavor, with just the right amount of oil to keep it from being too dry or messy. In fact, the first slice I had dripped only two drops of oil onto my lap as I enjoyed it in the car—an indicator of perfect balance! The aroma was fantastic, with the scent of garlic and fresh basil making for a pleasant experience.
While this pizza won’t knock your socks off if you’re a sauce lover, it delivers exactly what you’d want from a well-made white pizza: simple, fresh ingredients in perfect harmony. Overall, I’m giving this pizza a 7.6/10.

Read moreSo disappointed in the service we had sitting in the bar area during lunch recently. Our server, NOT the normal bartender/server with red hair (Dee?), was absolutely horrible. We shared with her that we needed to be out within 45-50 minutes where she laughed like we were being foolish and said flippantly no problem- we were the only customers sitting at the bar. After bringing us our salads our pizza arrived 40 minutes later and that was the only time we saw her over that period of time. As we scrambled to eat our pizza, we looked for her to get some extra napkins she was nowhere to be found so I had to hunt some down. Eventually we saw her and asked for “to go” boxes and the check as we had 5 minutes before we had to leave.She brings out one box, yet having 2 partially eaten pizzas and no container for the salad. We had to ask for more boxes and the check again. Upon receiving the extra boxes there was no lid for one of the salad dressing where I had to walk into the main dining area to ask her for a lid- all the while i had to leave for a work call. She brought over the lid and never apologized for the service nor delay. I really struggled with tipping her at all but I was afraid they might share tips. Regardless her service was probably the worst I have had in recent memories…we used to visit Aviva once or twice per month or order take out, but due to this crap situation it is doubtful we will be back. We hosted a large graduation party for our North Catholic Grad, and every guest was blown away by the incredible variety of freshly made, hand-tossed brick oven pizzas. I know what you're thinking—pizza at a grad party? But trust us, it was a huge hit!
In addition to the pizzas, we added entrees like chicken parmesan, mac 'n cheese, and chicken tenders—all absolutely delicious. The quality and flavor were top notch.
The service was exceptional. A big shoutout to Scarlett and “Pizza Man” Justin — their professionalism and energy added so much to the event. In fact, several of our guests were exc!ted to hand toss their own pizza! So much fun. AVIVA is lucky to have such outstanding team members on staff!
The planning process with Joe and Mike was smooth and stress-free, and Sue’s help with post-party accounting was the cherry on top.
