Read moreThe Kalbi Beef at Da Bald Guy food truck is a feast for the senses, with layers of flavor and texture that make every bite memorable. The beef is tender yet holds just the right amount of bite, marinated in a savory-sweet glaze that balances rich soy with hints of garlic, nashi pear, and subtle sweetness. As you bite into it, the meat releases a burst of deep umami, countered by the touch of caramelized edges that add a gentle crispiness.
Served over fluffy, warm rice, the marinade seeps into the grains, infusing them with extra flavor. Alongside, the pasta salad, tossed with furikake, brings a cool, creamy contrast that’s uniquely Hawaiian, adding a layer of savory, briny taste that complements the beef perfectly.

Read moreWe flew from Houston to try his food. We saw him on a show on Netflix and then rooted for him on the Great American Food Truck Race. We loved It so much we went twice. First time, we ordered to mix plates: furikake salmon and garlic shrimp, and second plate was kalbi and pan fried poke. The kalbi was moist and tender; the salmon was my absolute favorite. Super crispy, not dry, and the sauces took it to the next level. The garlic shrimp was bomb. Not the best i had on the island, but close to it. The pan fried poke was my least favorite. Needed more flavor. Maybe the chef that day didn’t have a good hand on the seasoning. 🤷🏽♂️
The second time we just got one plate and I got the salmon and kalbi. Just as good as the first time. The mac salad tastes different than most and has more flavor. The furikake salmon is one item I’ll always remembers.
My only suggestion would be to have a spicy option. I’m kind of at the place where I always want a spice to my food. Maybe touch on the acidic aspect too. Keep it up! Love what you are doing!
Also, $20 for what you get is incredible. $25 for a mix plate? Even better. I don’t know these jokers complaining about lack of...
