Da Bianca Trattoria — Restaurant in Orange

I ask your patience in reading the entire review, as I've never accounted anything close to these circumstances. Briefly, we are of the age with resources to dine out over 300 times annually. We go out of our way to show appreciation to anyone waiting on us and 25-30% gratuity is our norm. We have our favorites and return to them regularly. This restaurant is one of them. I wrote a Google review about a month ago that follows, and by any standard very favorable. Here's where it goes surreal. The manager/owner greets us and immediately say's your review hurts our business. I said all my reviews are honest accounts and yours in my opinion was extremely positive. Everything is low key nothing disrespectful on my end, although I'm completely shocked, but said I would look at it again. That didn't change her "Karen" like attitude and reminded me I had arrived early last time and she still seated us; at that point I had enough and told her that"s why the accompanying 3 star rating to the review won't go higher. Apparently, it wasn't the review but the 3 star rating she was indignant about. If she had thanked me for the review and asked if I would consider raising the stars to 4, I would have done so, because the food is excellent. She then told us to leave. In leaving, I assured her that what your now reading was a certainty. For the record: 4 stars, for the food; 4 stars for service; 1 star for ambiance; 3.5 stars overall. Let me explain the 1 star. 30+ year old strip center type storefront, the bathroom is outside behind kitchen and looks like those in gas stations, some tables need napkins to make them level and a owner that rarely makes you feel welcome. Let me add , my reviews , are honest opinions of the merchants, or medical services I receive and meant to inform others not promote without merit.. Perhaps it's the world we live in, but this entire situation reminds me of the Soup nazi, in the Steinfeld series

Because of space maximums the original review is on Open Table ..................................... The owner answered all of this, {please read following this response} in the most unprofessional way. She showed lack of business acumen and seemed to lose sight we enjoyed the restaurant many times and the review very positive,.  Her statements of "absolutely lost it",  "being aggressive" and some childish comment about returning with an incendiary device is absurd. Nothing remotely transpired, like that. As mentioned before, I said I would look at the review, but that started a Karen like attitude and It was only after she told us to leave, that, "the finger" toward her was the only display of utter frustration, in dealing with an owner that asked a good customer to leave, because she didn't agree with stars given  in a review . To add personal attacks , that somehow I'm a self indulgent computer screen coward, or I'm privileged because i/we eat out 300 days a year,  when that includes her restaurant, has no place in her desire to  protect what the restaurant has earned over many years. However, I believe the family would be as shocked as I was for their child/relative to tell a customer to live with such poor judgement. My reviews are honest and meant to inform, to others like me that enjoy going out to eat (privileged, or otherwise). We treat those who wait on us, as friends knowing their names, as that affords us their very best service and we tip generally in cash,  a further gesture. This restaurant is no different. Let me end this by saying, perhaps, this owner needs a manager, so she can do other things than turn customers away, however, her interaction is minimal- the facility is not the best, however, if good italian food served by a friendly staff, is your favorite this is a...

Da Bianca Trattoria has been a favorite for quite a while. Food has been quite good with superb recipe and preparation. So that said, our groups' last visit was quite a disappointment. My wife had her heart set on a chicken spinach cannoli. We were there at opening and were told they were out. My guest and I both ordered ciopinno. Cioppino traditionally has calamari, scallops, mussels, claims, snow crab legs, white fish, shrimp depending on what might be available locally. So the menu stated shrimp....no shrimp....just mussels, one tiny piece of white fish and some tiny bay scallops we think. You get the picture. Poor recipe not followed and presentation. We inquired and was told "5 of everything on the list". Disappointing for the price. And to top the evening off. NO SPUMONI. It was the trifecta. So something was amiss for sure. I hope they resolve this quality and menu issue soon so we can see things back up to former...

We had Salmone alla Champagne, Salmone Calabrese , Linguine alla Checca, Gnocchi alla Sorrentina, Torta di Ricotta, and Affogato. You can tell the ingredients were very fresh. The champagne sauce was creamy and delicate and the salmon was gently cooked. The salmon in the calabrese was crisp. The veggies in the linguine alla Checca were tender but not mushy. And the gnocchi was pillowy and held the marinara in the grooves. The desserts were delicious also. Haley was our server. She was very attentive and helpful.
