I think I must be in Tucson. I haven’t had family style Mexican food as good as this anywhere else in the US.
Nothing complicated but they do it right with the right ingredients. This time I had Suadero / shredded beef enchiladas with red sauce. Layered with tasty sauce, mexican crema and queso fresco. The corn tortillas are full of flavor. I’ll have to take some of their flour tortillas home to see what those are all about.
The beans taste like they were made with lard or at least the equivalent sum of butter. I salted to taste, but I won’t hold that against them as that’s subjective and easy for the individual to fix.
The rice is nice and fluffy and otherwise boring but all the better to mix with their excellent beans and selection of salsas. My favorite is the bright orange habanero salsa with the right amount (read: high) of spice to make your whole body tingle.

She was cooking several tickets, that means alot of different meats on the grill at the same time, while also assisting the other employees by being a step ahead and deligating what she needed by calling it out and running the whole show. The restaurant was súper súper busy and she had everyone following her lead and never once did she seem overwhelmed. She was focused, and it almost seemed like I was watching something magical. She gave the performance of a top executive chef and I hope she one day has her own restaurant and someone walks in and invests in her because she was born with that level of talent. While the rice and beans were good, the chicken was flavorless, the guac was mid, but most disappointing was their Chile Relleno dish, it tasted almost toxic, like there was remnants of cleaner spray or something in the dish? Took one bite and spat it out. Due to their quick service model, you pay in advance and there is no quality checks, you even have to retrieve the food from a buzzer and bus yourself, so there wasn’t an easy opportunity to pass along feedback as there was a line.
