Was not happy with the vegetable beef soup or chili. Vegetable soup tasted like spaghetti sauce. Not enough potatoes. All I could taste regarding the chili was salt and it was way too thick. I'd like to help you out with some recipes. 1)Easy vegetarian vegetable or vegetable beef soup (Cook beef separately and keep it separate That way you can offer vegetarian vegetable and vegetable beef, so 2 soups in one) Ingredients One bag of frozen peas and carrots 4 celery stalks chopped 1/8 inch thick 48 oz or two cans of petite diced tomatoes 2 chopped yellow onions 1 14 Oz can of corn 10 lb of potatoes peeled and chopped into large 2-in chunks Two 2 lb cartons of vegetable broth 1 stick of butter Add enough water to cover if necessary Boil until potatoes are fork tender Add salt and pepper to taste Serve with unsweetened cornbread Cornbread recipe Preheat oven to 425 Fahrenheit Liberally grease an iron skillet or baking pan 9-in diameter Preheat the pan for about 5 minutes Mix one and 1/4 cup of whole milk, 1/4 cup of vegetable oil or Canola, one large egg, then slowly start in two cups of buttermilk cornmeal mix Pour in to preheated pan Bake for 8 minutes check every 2 minutes after that Bake until golden brown and firm in the center You can put a toothpick in the center and if it comes out clean it's done Slice into eight sections Serve with butter 2)Chili Ingredients You may have to double or triple the recipe depending on how much you typically sell 2 14oz cans lucks pinto beans 1 can Hanover red kidney beans 1 can beef broth 1 lb burger meat 1 diced onion 1 28oz can diced tomatoes 2 tbsp cocoa powder Brown sugar Fiesta brand San Antonio style quick chili mix Salt to taste Makes about 12 cups Instructions Brown ground beef Add diced onions and saute until onions are tender Transfer mixture to a large stock pot Add broth, beans, and tomatoes Bring to boil Stir in cocoa powder Stir in 1 tsp chili powder at a time, stir and taste until desired flavor is achieved Add salt 1 tsp at a time until desired flavor is achieved I had brown sugar one tsp at a time until desired flavor is achieved 3)potato soup Peel 10 lb of potatoes Chop them into 2-in pieces Peel 2 sweet yellow onions Slice them into rings and break them apart Put onions and potatoes in a 12 quart stew pot Cover them with water plus 2 inches of water above potatoes and onions Boil until tender Add one stick of real butter Add one cup of heavy whipping cream Salt and pepper to taste If you're going to be offering bacon bits on the side be really careful with the salt I suggest serving toppings on the side If you want to thicken the soup do not add flour or cornstarch Instead just remove a few potatoes and mash them and add them back to the pot Repeat the process until its thick as you want it You can put toppings on the side such as green onions, bacon, shredded cheese, hard boiled eggs Serve with unsweetened cornbread Place is very clean. Read moreI decided to stop and have some lunch at a diner next to a truck stop yesterday. How bad could it be? Every other place next to a truck stop has had really good food. I ordered the liver and onions with a side salad. I should have asked if it was beef liver because what I got was chicken liver. Let’s start with the salad it came in a tiny wooden bowl that was cracked from the edge to the bottom of the bowl. It was topped with shards of hard grated cheese strings the lettuce was at least not wilted and was fresh. Moving to the livers, they were burnt, hard and nasty I could only eat a few of the dozen or so livers. There were small hard as a rock pieces mixed in with the hard burnt livers. The onions, there were four or five thin rings of onions. They were equally burnt and hard. The mashed potatoes tasted off I think it was the brown packaged gravy that must have been days old, I couldn’t eat them either. I can only say this was one of the worst meals I have ever had. Read moreHad a club sandwich. They used a solid piece of ham that was spam like. The same with the turkey, processed slab of cheap turkey meat. Probably the worst club sandwich I've ever had. I think it was around $15.00 with fries. Guess I'm just used to slices of lunch meat that's fresh on my club sandwich. The sever brought us our food and never came back to the table again. Waited for drink refills for over 10min but she never came back. Probably not her fault since she was the only one working the whole dining room with over 10 customers. We just asked for drinks to go when we went up to pay for the food at the register. Also, there is a sign stating you only get one refills on drinks. If you get 2 refills they will charge you for another drink so don't be thirsty. Atmosphere is super chill. Mostly truckers stopping in. We were passing through in the semi and stayed at the hotel across the parking lot which was sub par. Will probably just skip this exit next time and go down to Hope...
