Accepting the invite on Easter Monday 4/1 to return to St. Thomas for Carnival, I'm grateful I made it back! I love the vibrancy of the island and it feels good to reconnect. Day 2, I opted to try Sib's On The Mountain, a nice relaxing hideaway. I wasn't sure at first if I could manage the walk up since the inclines can be super steep in St. Thomas, but it wasn't too bad (I need a place like this in Orlando as my workout spot). It's a moderate inclined hill and took about 10 minutes from Mafolie. (I definitely got my HIIT mountain workout in.) The place is on a traffic busy street so if walking be vigilant going up and coming down, and for safety, if you plan on drinking, I advise not to go alone. Upon my arrival here, I enjoyed the option to sit outside overlooking nature or watch sports on TV. The menu was vegan friendly (the non-vegan options looked good as well), I ordered the chickpea stirfry taking in the lush nature views. (This was the perfect place to "semi-blend-in" as a local, as I often try to do where ever I travel. Sometimes it works, sometimes it doesn't...lol) While waiting for my dinner, I discovered that this place is known to be the oldest bar and restaurant on St. Thomas. This Sibilly "Sib" family run business, historically dates back to 1924, and was established by Mr. Jean Joseph Sibilly, and has been frequented by friends and neighbors ever since. Overall, the food was flavorful, the portion sizes were nice and filling, and I had the pleasure of trying new hot sauces made in the Caribbean that nicely enhanced the flavor profiles. It took me back to, "You bring the heat, I bring the water". The staff was awesome. Eventhough they were short staffed, Solange, the bar and restaurant staff did a great job managing a full dining room and bar (plus a few tables with parties of 6+) to provide seamless service. Be warned: it took OVER AN HOUR for a measly schmear of avocado on toast and some breakfast sandwiches. Really wished we hadnât tipped so well prior to the discourtesy we experienced here. To elaborate, it wouldâve been a decent experience this morning had it not been for the rude, unprofessional, and unnecessary comments from this girl in the kitchen. Our group was greeted kindly by the cashier and were told there had just been a large to go order placed before we arrived. We were prepared to wait the 25 minutes they had predicted it would take to have our food ready. We all waited very patiently for OVER AN HOUR before politely asking the nice cashier for an update on our order, as we had been waiting for more than double the time promised. The cashier responded with an apology and that the order would be ready soon. However, the blonde girl in the kitchen felt that the apology was not warranted and rebutted, âWhy are you apologizing?â The cashier told her that our food had taken too long time to be prepared, to which the girl responded, âYeah and we have a reason itâs taken so long.â I can only assume the cashier is this girlâs mother, as I cannot imagine the disrespectful attitude this girl had with the cashier the whole time would be one she would have with her boss.    Read moreCame here for a weeknight dinner and had a pleasant time! Quaint location in the mountains with history on the island and a fun bar energy. I understand that many places operate on âisland timeâ and you canât expect service at the speed of state side, but our server was inattentive and only stopped by our table once to get our drink order and once to drop off a few dishes â we had to wave down random servers to get water, appetizers and such. Sibâs has good variety for types of meals and portion sizes â we had the ribs and chicken tenders (4 per serving) as appetizers for the table and ordered meals too. I had the ahi tuna sandwich and the fish fillet was large and fresh (great value for the price). One reservation I had about it was that I asked for it to be cooked medium, and the whole middle came out raw â I know charred tuna is usually raw and blackened on the outside, but since options for preparation level were offered, I assumed they were going to cook it. The chicken tenders were pretty small and the order came with 4, and were the same shape and coating as mozzarella sticks. The ribs were pretty good, and we got them with sweet potato fries which were excellent. They have a list of specials â my husband got the Mac and cheese burger and found it ok, nothing exceptional and average price for the burger. There is plenty of parking, with a dedicated lot for the restaurant! We didnât need a reservation â there was plenty of indoor bar seating and covered outdoor dining seating available.
