Ye Sushi — Restaurant in Stayton

Stopped in for a quick lunch after a hike at Silver Falls and we were pleasantly surprised by how tasty and great our sushi was. We had read the reviews before stopping in; So, we were expecting good sushi but it exceeded our expectations. I ordered the sushi lunch with the creamy scallop roll, and yellow tail and salmon for my nigiri choices. The scallops were firm and sweet and very fresh. The only downside was that there was too much mayo on top of the roll but I didn’t deduct any stars for this because I was easily able to scrape off the excess and it was, after all, a “creamy roll”; So, I can’t fault them for making the roll exactly as described. My nigiri was truly amazing. I lived in Hawaii for 9 years and regularly feasted on the freshest yellow tail in the world and this yellow tail nigiri was as good as, and as fresh as, anything I had in Hawaii. The salmon nigiri was also amazing. It was firm, super fresh and had great flavor. We dined-in; so we also got to enjoy their miso soup and cucumber salad, both of which were very tasty and rounded out the meal nicely. The restaurant is pleasant for a small town and it was super clean which, in my opinion, is the most important characteristic in a restaurant. Good sushi, great service and a gem to a little town like Stayton. We had a veggie tempura, miso soup, rainbow roll, and the tuna roll. I can only think of 2 things I would have changed, both of which are minor it’s hardly worth mentioning. 1. The asparagus stalk in the veggie tempura was large enough to be sinewy at the bottom (but to be fair, this seems to be the case at every sushi place that uses asparagus in the tempura mix). 2. The seaweed in the miso was a little chewy which was a first for me. Both of these things didn’t detract from the overall meal and the food was otherwise, fresh, generous, delicious and as I would expect in any bigger city sushi restaurant. I ordered the spicy chicken don and could not eat any of it. Chicken was rancid and had zero char might have even been slightly undercooked. I went there on Friday 07-12-24 at 3:27pm and my server was named "Fiona" The owner referred to her as this name. Cost 13.00 and had to throw away. Got 2 other people to confirm it was terrible. I WILL NOT RETURN. The reply from the owner trying to imply I didnt patronize his business is, bunk and a true reflection of their poor mentality trying to accuse their customers of deception instead of apologizing for serving TERRIBLE chicken.
