Went on a busy Saturday night with live music. We ordered at 5:50 with an estimated 30 minute wait for 2 pizzas, rolls, and a salad. 7pm rolled around and I think they either lost our order or someone else grabbed it. Wife and two kids were hangry and just wanted to eat.
When I approached the window the man taking orders and seemingly running the operation was very apologetic and wanted to refund us. I refused the refund saying all we want is some food and we appreciated them being there and doing what they could to serve all of the crowd that was there.
I recognized that this was a family run business with hired help and therefore I'm not about to leave a scathing review. I did however recognize some efficiency opportunities that would help them handle the load of a busy weekend night.
they need a way to turn more pizza. I get the marketing behind "wood fired pizza" and they only have one pizza oven so they are limited by their oven space when things get busy. Thinner crust would mean quicker cook times. Hotter oven would also cook faster.
they need a crisp way to get food to their customers once it's ready. Easiest would be a loud speaker telling us our food is ready. Better system would be a text. I think a handwritten receipt is the reason we lost our order. At a minimum they need order numbers
I understand pricing fluctuates every day, but they need to have prices shown on everything. If I had known that a single pizza roll was $4.50 I wouldn't have ordered 4 of them. Two pizzas, 4 rolls, and a salad was over $55.

I am a resident of Dalton, GA and we have a wood fired pizza place but this place is a good truck in Texas. Believe me, this pizza was fantastic. The customer service was great.
