This review is for my first visit on Saturday, March 1, 2025. We showed up right around 1:00 PM for our first visit. Not terribly crowded. Super friendly greeting as soon as we got in. Friendly ordering, and the whole place was really clean and well kept. We got the 2 meat + 2 sides plate, and the smoked turkey sandwich + 1 side. 2 drinks. Even after a nice tip, this was right around $50 bucks. Honestly, I feel like this was a great value. The brisket was just about perfect with a nice bark, thin and well defines top fat layer (not too much at all), and nice smoke ring. Juicy, not dried out. The house made sausage had nice flavors, and pronounced black pepper, which I enjoy. The regular mac and the hatch chile mac were both just fantastic. The corn elote was spicy and I suspect might have had just a touch of cayenne thrown in there. We sat outside in the semi-covered open air space next door, and it was a great place to enjoy our lunch. This is a solid 5 star BBQ place. Now, I live in Fort Worth, and have lived my whole life with Angelo's as the standard, later Railhead and more recently Heim and Terry Black. I even served on a team for a number of years making and serving brisket and sausage and beans. I feel like I am qualified to say "this is really good BBQ". Hill City is easily in my top 3 of all Texas BBQ that I have traveled to. I will continue to support them, and look forward to many more trips....

I thought I would try this today so I went and ordered a three meat plate, sliced brisket, ribs and turkey. Sides were hatch Mac and cheese, potato salad and the beans. I didn't get the potato salad they just put in another Mac and cheese so maybe they just forgot. The best thing for me was the beans, the brisket was good but it was a little mushy for me like it rested to long. The turkey was I thought the best meat I had. The ribs were good also, this place is the best BBQ in the area in my opinion, it's going to do very well compared to the duds that are in granbury. I would recommend and I will be back with my family to try the brisket again. The rub is very similar to goldees to me. I look forward to trying again. I feel like 4 stars is very fair for this place. I reserve my 5 stars for franklin's, and the joints in Lockhart and a few others across the state. Glad this place is here, I was very happy...
