Just back from Bound by Fate's 3rd anniversary and Beer by Candlelite dinner. We got there about 5:30 and the place was packed. Tealights were everywhere and was just a beautiful atmosphere (but hard to tell if there were any tables in the back). We did manage to find one up front, thankful for the unseasonable warmish weather as we were right by the door. Ordering seemed like it might be difficult because of how crowded the bar was but it turned out to be pretty easy to be heard (though I did have to look up what beers they had (hard to read the menu on the wall in the dim light)).
Food wise, we were fascinated by the Laotian cuisine and started with spring rolls and tamarind fries. The fries had just a touch of sourness from the tamarind that paired well with either the garlic mayo or the spicy ketchup. For the main we split an order of the curry noodles with shrimp. The shrimp were large and tender, the coconut balanced out the curry in the sauce and the cabbage added nice texture. We quickly ate all of that dish. We finished the meal with an amazing sticky plum cake. The cake was warm and moist and sweet, the toffee glaze a rich and indulgent way to top of the evening. For drinks, I had flight of beers ranging from hazy IPA to a malt brown ale. The rye saison was particularly for with the curry noodles. My wife had a house-made hibiscus Laos soda with botanical gin. Sweet and definitely would be refreshing on a warmer day.
The service was great, very friendly. How they knew where we were sitting after we ordered the food while standing at the bar is a mystery. The folks behind the bar did a great job of making sure no one waited too long to order or pay, keeping an eye out on all three sides.

Read moreAnother post from a place I tried a couple of weeks ago - Haan Lao at Bound by Fate Brewing Company in Schuylerville. What a wonderful treat! We enjoyed trying several plates of this new-to-us food, unlike anything we had before. The small plates were perfect for sharing, not too heavy, and full of flavor.
Spicy soy glazed wings that were meaty, saucy, and full of just the right amount of heat to start. We loved the Spare Ribs, but felt it was a smaller portion compared to the other plates, so I might not order them again.
Next up were the Tamarind Fries, with flavoring that reminded me of salt and vinegar chip seasoning. So addicting that we devoured the whole plate.
And last, the Kua Mee Stir Fried Noodles with Brisket and no bean sprouts. Oh my goodness, the brisket was so tender and the sauce flavorful and well balanced.

We were wowed by the awesome beer selection and interesting choices that were not high in abv. Then we ordered a few dishes to share and another wow! The pickled veggies were crispy and fresh. The pork belly was amazing. The sauce was savory and sweet while the pork was crispy and cooked to perfection. We also had the coconut rice in the lettuce wraps which was an interesting combination of flavors with chewy rice and crunchy nuts. We were quite satisfied at this point but had to try the chicken wings... another wow. The right amount of hot with juicy chicken and coconut milk drizzle.
