Rye Republic — Restaurant in Town of Southeast

Met up with a few friends here. We had been looking forward to checking out Rye Republic for several weeks. Ordered the bacon old fashioned drink. It was not good, a kin to warm bourbon with bacon grease. Menu description was promising but the execution was very poor. Requested a regular old fashioned which was very good. We ordered an appetizer and 2 entrees. Appetizer and one of the two entrees were served. The salad had no less than 3 inches of cheese. Seriously, have never seen that much cheese on a salad, which low and behold, was a cover-up for the worst salad ever. Server never came back to check on us... no water refill, no drink refill, no inquiry into the food (aka the cheese and lettuce situation). Nothing. Eventually caught their attention and reminded them there was a missing entree. We kept hearing the fryer cackling in anticipation our missing entree was on the way; alas we were mistaken. Apparently the order was never placed which is strange as the establishment was not busy beyond 5 tables (all of whom ate, drank and left during our stay). Finally close to an hour after we ordered our meal the second entree arrived. Fries were 'well done' and sandwich was a hot mess, not in a good way. It was messy with zero flavor/seasoning and chicken was very slimy and devoid of crispness despite being 'fried'. Both the bacon drink and sandwich entree were comped which was a nice gesture however not enough to bring myself or my friends back which is a shame. Giving 2 stars: 1 for the regular old fashioned which was the best part of the experience, the second star for not charging us for food/drinks which was appropriate given they were unsuitable for...

Amazing Cocktail bar that lives up to its name. Rye Republic is not your run of the mill watering hole. It will provide you an experience like none other in the area. From the moment you step foot inside you will feel and see the difference. Making unique cocktails is the name of the game here. Whether you choose to order straight from the menu be sure to strike up a conversation with Matt who is one of their mixologists and talk about the spirits you enjoy with the flavor profile you desire and with his vast knowledge he will be sure not to disappoint.

If you don’t fancy a cocktail and are looking to stay a more traditional route Rye Republic can suite your needs as they have a great selection of wine and beer that can satisfy almost anyone looking to unwind in a relaxed atmosphere.

The menu is simple but delicious. Rye Republic is a great choice and option for those looking to pick or have a good simple meal for the night out. I’d love to see them add a few more items to the menu, maybe a flatbread, pretzels or even a twist on a personal pizza as all those would complement your cocktail choice.

Matt is fantastic behind the bar and Casey who is the proprietor could not have made our night any better.

The vibe and ambience just makes this establishment stand out from anything in the area. Brewster has been in need of a resurgence and I’d love to see Rye Republic be the change Brewster needs. In an area that doesn't often have great options, especially during times when places might be closed, this restaurant is an absolute wonderful little stop and gourmet experience. Not only is the design of the restaurant impeccable, but when you go in the bathrooms then you know that the place is really taking care of the cleanliness and the aesthetics. Lol. The food is excellent and I highly recommend the fried chicken even if that's not your thing. It's unlike any other fried chicken you've had. The bartenders are absolutely awesome and we have been here both to experience Drew and Matt. They are personal down to earth and cater to your needs and give you the space you need or can chat you up if that's what you're in the mood for. That's how you know when somebody is a truly a good bartender. Not only that but they are very skilled at what they do and they make great cocktails. These are legitimately craft cocktails not here running the mill versions. I normally write a bit more of a detailed version of a review, but I do not want to forget to mention how wonderful the staff is here and how much they care. Strongly encourage you to visit this place and give it a shot and don't forget to order yourself and espresso martini. Get your butt here and let me know what you think!
