I’ve been coming to American Flatbread for almost 40 years now, and every time I return, it’s like stepping into a pocket of peaceful magic where the world slows down and everything just… feels right. Nestled in the green heart of Waitsfield, this place is more than a restaurant—it’s a ritual.
The energy here is grounded and glowing, from the giant clay hearth oven that radiates warmth and love, to the open fields where kids run barefoot under the mountain sky. The barn hums with life—laughter, good vibes, and the scent of wood smoke mingling with fresh basil and melting cheese. You can taste the care in every flatbread, each one a canvas of local ingredients from farmers who know the land and love what they grow.
The food? Soulful and straight from the land. The Evolution Salad bowls packed with greens so fresh you’d swear they were picked moments ago. The Revolution and Punctuated Equilibrium are more than menu items—they’re philosophies, slices of something deeper.

Read moreFlatbread is overall really cool, and their pizza is amazing. Only Significant drawback - which really rocked us when we went last time - is their booking system. Flatbread only allows in-person reservations starting promptly at 4:00pm on the days they are open. Because of the demand for the best ‘za in all of the land, by 4:00 there is usually a decently long line of folks waiting to claim their tables for later in the evening.
Having been rejected the night before (fair and square, we got there around 3:45) we were determined to get a table the following day, so we showed up at 1:30pm (they said we set a new record and one would hope so!) Being the first ones in an exceptionally long line of hangry mountain dwellers, after waiting an astonishing 2.5hrs we made our reservation for 8pm (note: go earlier). Later on our family arrived promptly at 7:55, only to wait for another entire hour. After all the trouble we were pretty discouraged by that, and to be fair our frustrations began to show a bit among some of the elderly folks, but no concessions or encouragements were really made by the service, who I will say we’re genuinely working their tails off. This complaint is to organization of the reservation system, not the service people themselves.
What really took it home for us was where they stuck us after all that time. We were squeezed into a side table by the kitchen, not even in the dining area. Read moreWe visited here in March 2017. The only reason I give it 4 instead of 5 stars is because of the imperfect reservation system. We followed the rules, but a couple who did not, essentially took our spot and we had to wait an additional 45 minutes for our table on top pf the 20 we already waited. After we are finally seated things vastly improve. Our server is fantastic, great service, and the pizza (Vermont Sausage) is out of this world! Maybe the best pizza we've ever had.
They have Lawson's Finest Sip of Sunshine on tap, though at 11.00 for a pint it's about 2.00 more expensive than elsewhere in town.
It's worth going for the pizza, but the customer would have a more overall enjoyable experience if they would either stick to the established procedures or just simply take reservations over the phone.
