I probably should have written this review when I went to Vermont a couple of months ago, but like everything else, busy-ness got in the way. So here it is. Prohibition Pig is right across the street from Hen Of The Woods in Waterbury, Vermont. Once you walk in, it will seem like a more modest place than it's upscale sibling across the street. But do not be fooled by it's more whiskey/beer feel to it, because the food you are ordering still has pizzazz to it. That's right, I used the word pizzazz. And this ****in' place has oodles of it. I found out about the pizzazz by tasting the cole slaw. Normally, cole slaw is a bit of soggy and a bit of crunch. I will usually choose this as a way to supplement my daily vegetable intake, vegetables = healthy stuff. This cole slaw, though, was special enough that I remember needing to write about it. The flavor was better than the traditional cole slaw and made it enjoyable! I recommend this. I had one of their cocktails, which featured tequila, some other drinks, and a spicy salted rim. It was also delicious. The staff were friendly. The manager spoke to almost every table and was very amiable. They remarked about it being about a full year since a strong storm flooded the downtown area of Waterbury and made it really hard for Prohibition Pig to get back up on their feet. What happened less than a week later was the same kind of strong storm. Waterbury struggled, but Prohibition Pig is still going strong. I recommend coming here, seriously. Like, drive the extra 30 to 45 minutes out of your route if you have to. This town is filled with amazing places, and Pro Pig is one of them. I will definitely be coming back!

My wife and I came in for dinner on a Monday night and quickly grabbed seats at the bar. The ambiance was great - felt warm and cozy with nice touches that didn't make things feel too fancy. I tried a number of their beers, and they were all excellent. My favorite was the Vanilla Bean Porter, but the double IPA was also great. My wife ordered the hush puppies as an appetizer, which I'm not a fan of generally, but the maple butter was great. I think they felt a bit over friend (or the fry oil was a bit old) as they were very dark in color. I got the Patriot burger and it was truly epic! Great flavors and great bun. I'd have preferred the onions chopped much smaller, but it all worked as a great package. Lindsay had the chicken and biscuit sandwich with a side salad. The biscuit was amazing, but the chicken to biscuit ratio was just way off (way too much biscuit). The chicken was also kind of meh. That being said, the side salad was very very tasty (I'd highly recommend the maple balsamic). Anyway, good solid meal and we really enjoyed ourselves in a convenient part if Waterbury!

Really fantastic experience the entire way through. If you’re planning to come, BE PREPARED TO WAIT! But it is WORTH THE WAIT. I’d recommend coming a little before you’re ready to eat, you can go get a drink in the brewery behind and also shop at the craft beer store across the street. Cocktails are great and big beer and wine selection. Definitely finish the meal with housemate limoncello. We got A LOT of food and all of it was delicious. Top 5 of what we got: 1. Chicken Wings - I think we ate these too quick to get a photo. They were dry rubbed and so so tender and flavorful. Very crispy. 2. Roasted carrots - they tasted like they were smoked and had a subtle but delicious maple glaze. 3. Pickle Plate - beets 11/10 4. Baked Beans - warms your entire insides. 5. Duck fat fries - perfectly crisp HONORABLE MENTION - the ranch is one of the best I’ve ever had and the garlic aioli that came with the fries. The staff was super friendly and quick. They were knowledgeable about allergies and tons of gluten free options available.

With a 1-hour-wait on a Tuesday evening, we knew it was a great choice. After a full day of travel, however, we chose its brewery’s patio around back on the street. We discovered the BEST hi-tech restaurant during the pandemic! Each seat, at a sidewalk counter—or at an umbrella table—had a separate, numbered QR code to order. We sat down with no wait, ordered drinks, an appetizer and two entrées without any glitches. Before my phone was down, our drinks arrived by a masked server who confirmed our order. Almost simultaneously, a masked runner delivered our app. Appropriately timed, my Cuban sandwich and her spicy fish tacos were hot off the grill just as the fresh, chunky guac and tortilla chips satisfied a real hunger, which could’ve never endured a 1-hour-wait in the front of the house. Our bill arrived via my phone, and check-out worked seamlessly, when I added a 25% gratuity for their job well done! We’ll, hopefully, get to dine in the restaurant on our next trip to VT; but the brewery was exceptional.

It was our first time in. Luckily we saw the waitlist on the website. Make sure you get on the list! We noticed multiple people come in expecting to grab a table right away. Our first interaction started with the hostess. She was very tentative and polite. Even helping the busser clear and set tables in between arriving guests. Wonderful first impression of the establishment. Jake was our waiter, he was very dialed in with his tables. Super knowledgeable of the food and drink menus. Wasn’t annoyed by our questions knowing how busy he was. Top notch, prohibition pig is extremely lucky to have him. We had the smash burger, Mac & cheese, cornbread, and finally the burnt ends over cheddar grits. Jake said this started as a special but was such a hit that they put it on the regular menu. It sells out quick, I highly advise getting there early to beat the rush and try it. 5 stars all around. This is the kind of establishment you would travel for regardless of the wait time. The beautiful scent of wood-fire smoke permeating the surrounding air always stirs up a desire to partake of carefully prepared meats and beckons one to make a quick visit regardless of schedule and time. Entering before a long line formed was a BIG plus. Friendly staff asked if it was my first time before guiding me through their menu and highlighting local favorites. Ordering was seamless and I headed over to one of the open tables in the back. It was a very chill and friendly place. Lots of banter among patrons, drinks poured nonstop and the kitchen worked together like clockwork. The ribs and brisket were great. Definitely something I’d totally order again. However, the nachos and the pickles were nothing spectacular - if not, actually quite boring. Not going to ding them for this if locals obviously like them so much (as could be seen consumed by half the patrons there that day). Definitely stop by if you’re in the area!
