It has come to my attention, and more so to my grateful senses, that within the industrious and hospitable town of Waterloo, Illinois, there stands a humble yet extraordinary establishment—the Coffee Girl Coffee House. Permit me a few words to express, with the full sincerity of my heart, the admiration I hold for this beacon of warmth, community, and rejuvenation.
Upon my entrance, I was greeted not as a stranger nor mere passerby, but as one long expected. Such cheer, extended without pretense, is the mark of true hospitality. The aroma within that house—rich and honest—did more to revive my weary spirit than even the promise of spring after a long Illinois winter.
The brew, I must say, is not simply coffee. Nay, it is a draught of democratic elixir—bold, balanced, and imbued with the strength of the prairie soil and the character of those who labor with care. Whether one prefers their cup adorned with sweetness and cream or as plain as a Quaker sermon, they shall find satisfaction here.
The proprietress—whom I take to be the Coffee Girl herself—is a person of enterprise, integrity, and warmth. She hath created a gathering place where neighbors may convene, ideas may be exchanged, and the burdens of the day may be lessened by good company and better coffee.
In these times, when division and haste often overtake our better natures, it is no small thing to find a place where fellowship is brewed daily and served without prejudice. The Coffee Girl Coffee House is such a place, and I commend it heartily to all who pass through Waterloo or dwell nearby.

They were absolutely amazing even though they were extremely busy! We went the day after the grand opening and we were seated in less than 10 mins. The floor came out looking amazing and even had small details such as flowers. Not sure how it tasted better than it looked! They have two different menus, for food and drinks that way you can just swing by for a quick coffee. They have coffee, lattes, tea, and smoothies. For food they have a two sided menu with breakfast and lunch options. They menu is actually pretty extensive and the prices are really good! I don't think a single meal was over $15. The service was actually really fast, with seating and being served! You don't have time to even admire everything before being seated lol. Overall it was probably the best experience I've had going somewhere and I'm not just saying that because it's AKs place! But here was the deal breaker: the pancake was undercooked throughout, and raw in the middle half. And I really like pancakes.
As there is not take service, I took my pancake up to the counter, and pointed at my uneaten pancake to the counter help. Me: "Please tell the kitchen the pancakes look beautiful on the outside, but it is doughy and undercooked."
Counter help response: "Our pancakes are made that way, they are a bit doughy "
Me: "Really? Look there in the center, see the uncooked dough and no bubbles at all? That's uncooked."
Counter help: "Sir I can get you a coupon if you're not happy."
I refused the coupon, because it's not about the cost of one pancake. And here's the thing -- all I wanted to be happy is exactly what I asked for: remind the cook that a pancake might look beautiful brown, but be well undercooked.
And yet, there was never an assurance the cooks would be informed. Instead I was told this case's pancakes are supposed to be doughy. I can assure you, NO they are not. It's a pancake.
