The largest park in Bologna, Giardini Margherita offers an excellent escape from the city life. There are a few bus stations serving the park so getting there (even as a tourist) shouldn't be an issue. The park is fairly large and there are plenty of areas where you can just lay down on the grass and enjoy your time. The paved walkways also offer a good opportunity for running, biking, rollerblading, skating, and so on.

On the west side of the park you'll also find a basketball court and near it people usually set up their volleyball nets.

One downside is that there are little-to-no shops. The ones that are there are fairly small and always busy. You might want to bring your own food and beverages if you plan on spending a longer time. There are a couple of supermarkets near the north-west corner entrance...

Really pretty gardens in the south of the city, beautiful pond, fountains and loads of grass. Great to get away from the old city for some open space.

Do - find the Vetro - ecological / environmentally friendly cafe / bar / vegetarian restaurant with water plants in the table, many plants, herbs, and of course lizards!
