Founders Oyster Farm — Attraction in Town of Southold

If you are an oyster lover, this is the experience for you! I recently chartered a boat for my dad as a Father’s Day gift and it was the perfect gift for not only him but for my mom and boyfriend who joined the charter. Captain Steve is extremely knowledgable of his oyster farm as well as the Peconic Bay waters. He took the time to explain how the oysters are produced and answer any of our questions! We also had first mate Michael, who shucked Captain Steve’s delicious oysters that were harvested fresh from the bay that day! As someone who has had many oysters locally on Long Island as well as outside of NY state, these were the best oysters we’ve ever had! We couldn’t get enough. Michael cleanly shucked each oyster and Captain Steve, in addition to the mignonette and hot sauce, provided a homemade cocktail sauce that was amazing! We truly had the best experience during our oyster workshop with Steve! It was super educational and we learned a lot, but he also just made us feel so at home (in his home). It felt like we were over at a friend’s house having a fun afternoon shucking and eating some of the most delicious oysters I’ve ever had!

I’ve also never been able to shuck an oyster before (I’ve tried on multiple occasions), but with Steve’s guidance and tips, I was shucking away! Very exciting.

The oyster experience with Steve was the highlight of our North Fork weekend. We learned so much about oyster farming , the Suffolk County aquaculture program, and the history and revival of oyster farming in these clean waters.
