Unfortunately I had an awful experience at this restaurant. I had high hopes for it because it looked amazing. Let’s take it from start to finish: The location and entrance is outstanding. It’s part of a hotel which is super convenient if you’re staying there. The ambience is truly amazing. White table cloth, bar downstairs, and the restaurant is upstairs. Our waitress was unpleasant with almost no personality. Even though we don’t speak Spanish we used google translate and tried our best with our pronunciation. The bar downstairs is full service, but you can’t order cocktails when you’re upstairs which seems odd. You can only order wine or beer when you’re upstairs. We tried to order a cocktail which was denied (not a show stopper though). We ordered a red wine from Bilbao which was fantastic. And I don’t even usually like red wine. We also tried to order an appetizer first but our waitress said no, we had to order everything at once. I got the Partridge stew. The flavor as delicious but was filled with bones. This made it difficult to enjoy. Understand this is from my view point that it was a stew and I am familiar with stews not having bones in them. We also got the roasted succulent pig which was very tender and flavorful. It was also on a bone which made it difficult to eat. We ordered dessert which was the French Toast with Nougat flavored ice cream. What we got was two scoops of ice cream and a cylindrical cookie. As we got about half way through we went and asked a different server because it didn’t seem right. Turns out they brought us the wrong dessert. But when the bill was brought they charged us for it. When we asked our waitress about it she pointed to the plate like: did you not receive it? I literally had to say: yes but we didn’t order it and was brought the wrong dessert. I wish I could give this hotel 6 stars!

My wife and I got married in Toledo recently and had about 50 family members stay at this hotel + we did one of the wedding events at the hotel.

It is incredible!! The location is perfect. Conveniently next to the old town but also just outside the old town where you can park more easily.

The hotel itself is beautiful and the new renovated rooms are perfect. Very nice and modern while maintaining the Toledo Charm

What really made this a 6 star stay for me was the staff. WOW.

Johan, Benjamin, and the rest of the maintenance team were incredibly helpful the entire time. They helped us with lots of luggage, storing some items, and moving boxes around. Never felt any negative energy, always a strong willingness to help. They are awesome.

The reception staff was incredibly helpful as well. Angelica and her team were a pleasure to work with leading up to the stay and while we were there.

The team that helped set up our post wedding brunch and the waiters were extremely helpful too. I wish I could remember their names.

I had the absolute pleasure of staying at Hacienda del Cardenal, and it was an unforgettable experience from start to finish. The hotel’s historic charm, stunning architecture, and lush gardens create a peaceful oasis that feels like stepping into another era. Every corner is beautifully maintained, blending old-world elegance with modern comfort.

The service was impeccable—staff members were warm, attentive, and always ready to go the extra mile to ensure a perfect stay.

Now, let’s talk about the food—simply outstanding! The restaurant offers a fantastic selection of traditional Spanish cuisine with a refined touch. The cochinillo (suckling pig) was perfectly crispy on the outside and tender inside, and the paella was bursting with authentic flavors. Every dish was beautifully presented and paired wonderfully with a great selection of wines.

The place is BEAUTIFUL, there is no doubt about that. The staff was friendly to us (Laura was a star!) and the breakfast was very scrumptious and enough to keep you happy through the day if you choose to skip lunch. The hotel is wheelchair accessible - although perhaps not easily so in all its parts) and has a discount parking nearby - consider how many hours of parking you need though, coz public parking can be substantially cheaper! The two main downsides are: insulation is not great, so if you have noisy neighbours you will know and, massive downside for me, there is not a lot of attention to carbon footprint, so all radiators are on full blast while the windows/doors are open.

Hice una reserva en el hotel con casi dos meses de antelación de dos habitaciones para ir el segundo fin de semana de febrero con mi familia. Había habitaciones de sobra al reservar por lo que las habitaciones no debían de ser las últimas. El hotel, la parte visitable, es bastante bonita y tiene mucho encanto, el problema esta en las habitaciones. Nos asignan las habitaciones 111 y 112, están bien de tamaño pero el olor a humedad nada mas entrar es muy desagradable, abro la ventana y me encuentro un pequeño recoveco con dos butacones viejos y 4 aparatos de a/a por lo que cierro la ventana. Pienso, "no pasa nada, tranquilo" entonces me voy a lavar los dientes y me encuentro un vaso que es mejor no utilizar para enjuagarse por que se le caen los trozos de tinte rojo que tiene; podían haber puesto uno de cartón pero no fue así. Llega el momento de la ducha y me encuentro con una toalla de rizo más delgada, debido al uso, que las finas del Decathlon, un desastre. Y por fin nos vamos a la cama, nos encontramos con un velo intentando hacer la cama mas señorial pero nada más lejos de su propósito, esta arrugada como si la acabaran de sacar de un saco, y para colmo el colchón esta reventado. Los muebles están en un estado bastante penoso y necesitan una mejora. Sobre el desayuno hay una carta con platos calientes pero no te informan ni te los ofrecen al sentarte, tuve que ir a buscar a la camarera del salón para pedírselos y la macedonia, que estaba en la carta, no tienen. El bufet era escaso en general y con un fiambre malo en particular, faltaban vasos y tazas que les pedimos con respuesta "no quedan, están usándose o sucios, es lo que hay". En conclusión, esta muy lejos de ser un hotel de 4 estrellas y , como le dije a la recepcionista, hay hoteles de 2 y 3 estrellas bastante mejores. Lo siento, pero no pienso volver.
